How To Make Oven Baked Boneless Skinless Chicken Thighs

These baked chicken thighs require only a few steps.

First, combine ingredients for marinade olive oil, Dijon Mustard, garlic, dried parsley, dried oregano, salt and pepper. We recommend marinating for at least one hour to let the flavors rest, but you can skip the time marinating and go directly to the next step.

Next, arrange the thighs on a baking sheet lined with parchment paper. Make sure that the bottom area of the thighs is facing down. Bake in the oven at 425 degrees Fahrenheit, flipping to the other side after about 12 minutes. Bake on the other side for 5 minutes and then flip over again to broil the top.

The recipe cook time and temperature does not work for bone-in thighs, so please only use this recipe for boneless chicken thighs. Bone-in chicken thighs take longer to cook.

How To Make This Recipe

  • Preheat oven to 425°F.
  • Pat dry the chicken and trim any loose skin and fat that is easily removed.
  • Prep a baking sheet with aluminum foil, a rack, and a heavy spray of PAM.
  • Place thighs skin down and sprinkle lightly with the spices of your choice. I suggest 7:2:1 or 7:2:2 or a little salt and pepper to taste.
  • Flip and tuck in any thin parts underneath and sprinkle the skin side.
  • With skin side up, bake in the 425° oven until an internal temp of 185°Fabout 30-35 minutes of cooking time.

    Recipe Tips And Substitutes

    • For a leaner cut chicken thighs, trim out all the fat on the sides of the chicken thighs and remove the skin. This will cut down on calories.
    • If you prefer to cook bone-in chicken thighs you can. Follow the same instructions as you would with this boneless chicken thigh recipe but double the time of cooking. Bone in chicken thighs takes much longer to cook and do not worry that they will dry out. The longer you cook them the more tender they will turn out.
    • You may use chicken breasts instead of chicken thighs for a healthier option.
    • Use any of your favorite seasonings. You do not need to stick to Italian Seasonings.
    • We used honey, but if you do not have honey try using maple syrup or agave.
    • To give this recipe a kick of flavor, drizzle some lemons over the baked chicken thighs towards the end.

    After the meat is marinated, it takes less then 30 minutes to cook.

    Place the meat on a baking sheet with a wire rack and bake at 400F for about 20 minutes or until the internal temperature reaches 170-175F.

    When done, brush BBQ sauce on top.

    Set the oven broil and broil for about 5 minutes or until the BBQ sauce is caramelized.

    The Best Baked Chicken Thighs

    I used to be a white meat girl. Wouldnt touch a thigh or a drumstick with a 10-foot pole they were always so greasy. I finally realized that when properly seasoned and properly cooked, oven-baked boneless chicken thighs are tender, juicy, and not at all greasy.

    After that, all bets were off and it was dark meat for days! I use my all-purpose seasoning blend and it adds a ton of flavor without overpowering the flavor of the meat. A little bit of olive oil keeps the chicken from drying out and helps the seasoning adhere to the meat.

    I prefer roasting chicken thighs in the oven, but you can cook them on the stovetop if you want. It takes about 7-9 minutes per side, but its a lot messier with more grease splatter than baking.

    Is It Better To Bake Chicken Thighs At 350 Or 400

    Higher oven temperatures produce that golden brown exterior skin that prevents the dark meat from overcooking and tenderizes the inside, making it even more tasty and tender. When baking chicken thighs, the higher the temperature, the more golden brown the outer skin becomes.     This is really going to depend on how large or small your chicken thighs are. The larger they are the longer theyll need to cook, smaller will cook up in less time. We usually cook for 20-25 minutes. Thighs cook up quickly at 425 degrees F, whereas a piece of meat or poultry with a bone will take a bit longer to cook.     These baked chicken thighs are a mix, drizzle and bake job.

    The key here is baking on a high heat to get nice caramelisation I bake the thighs at 220C/425F.

    How large or small a chicken thigh is will change how quickly it bakes in a 350-degree oven. While a standard boneless thigh will need about 30 minutes in the oven, thicker ones will need longer to fully cook through.

    • Smaller thighs will cook in 30 minutes
    • Average-sized thighs take 40 minutes
    • Larger chicken thighs will need 45 minutes

    Boneless chicken thighs are not generally so large that they’ll need more than that in the oven. As always, check on the internal temperature if you’re unsure of the doneness of your meat.

    Chicken Thighs On Stovetop

    I will say that if the two were the same price I would buy boneless just because it will soak up the sauce more and is way easier to cut and serve when its done. Reason I dont is the price, with the bone in obviously is cheaper overall. The timing does vary a lot between the two since it has to heat thru the bone with the one.

    If you needed a dairy free version of this I have found vegan plant based butter products at the store that are pretty good. Youd have to use coconut milk as the dairy which will be sweeter and not quite as thick but would work nonetheless.

    Bone In Frozen Chicken Thighs

    Preheat the oven to 360 F. Place frozen chicken thighs in a baking dish. They should not be overlapping, if so run under cool water to separate and lay in 1 layer, add rosemary.

    • Brush with a little olive oil to keep the chicken from drying out in the oven.
    • Cover the baking dish with foil and place in the oven. Bake for 60 minutes -after this time, the thighs should be soft.
    • However, if they are large, then the time can be increased to 80 minutes.
    • Remove the foil, brush your thighs with olive oil and sprinkle with spices and salt.
    • Put in the oven uncovered for another 30 minutes or until thickest portion reaches 165 degrees and skin is browned and crisped.

    Made with basic pantry staples with plenty of substitutions possible, this country-style sauce is adapted from these Baked Pork Chops. Its savoury and a bit sweet, with great layers of flavour. Heres what were using:

    • Worcestershire sauce packs a ton of savouriness, plus you can give yourself a pat on the back for using it for something other than Bloody Marys

    • Soy sauce the better than salt way of adding salt to anything

    • Ketchup OR Aussie tomato sauce, BBQ sauce or other similar type sauces

    • Brown sugar or honey or even maple syrup. Corn syrup, golden syrup or other such sweet things in liquid form should work just fine too

    • Garlic because it makes everything better

    • Vinegar because where we have sweet, we must balance with tang. Use apple cider vinegar if you have it, otherwise any other clear vinegar and

    • Oil just makes the sauce a bit more interesting. You can skip it if you want.
