Sticky Chinese Barbecue Pork Belly Is One Of The Most Popular Pork Dishes In Chinese/cantonese Cuisine And One Of The Most Ordered Dishes In Restaurants

My addiction to this Sticky Chinese Barbecue Pork Belly is my husbands fault. Being a former Hong Kong resident, he introduced me to Char Siu when we first metand it was love at first bite . Normally, our New Years Eve ritual consists of going to a popular Yum Cha restaurant here in Melbourne and ordering serve after serve of Char Siu. But as life happens, this year its a no-go. Booked out so early, , I now have to bring Char Siu into my house. Char Siu literally means fork burn/roast which is a reference to the traditional preparation, skewered with long forks and barbecued over a fire.

Well. I have neither of those things nor do I want to start a fire in my house. But I have come up with a way to make this safely in your own homes without the need of any fire extinguishers.

The plus side is: A) We can eat triple what we normally do and B) I can share the recipe with you.

Breaking out into a sweat with a furrowed brow, throwing ingredients into a bowl and taste testing along the way to try and match the traditional and authentic restaurant quality Char Siu sauce, I finally did it. It was a definite Hallelujah and Amen moment. After one tests and adjustments, you can bring a deliciously sticky Chinese pork recipe into your kitchens!

You can use lean pork belly ribs for a succulent, unforgettable experience pork shoulder or any pork fillet you like. Im not going to tell you what to do, except cook it using pork belly.

Different Types Of Pork Ribs:

When buying pork ribs, you will generally see three kinds: whole spare ribs, St. Louis-style spare ribs, and baby back ribs. Any of them will work with this recipe!

Whole spare ribs are the largest cut, and St. Louis-style spare ribs are just whole spare ribs that have been trimmed a little more .

Spare ribs have more meat than baby back ribs, and the meat has more fat . They are my go-to for this recipe.

Baby back ribs are smaller than spare ribs and tend to have less meat, but the meat is usually more tender. The cooking time will be a little shorter .

How To Make Ribs Tender

Making ribs in your oven can quickly lead to disaster for many home cooks. Ribs by nature are tough pieces of meat. The best ribs transform only through a long, slow, cooking process that they begin to melt into that tender summer treat we crave to slather with succulent sauces. Inexperienced home cooks will find that the baby backs have come up to a safe serving temperature and take them out of the oven well before they are actually done.

Unlike many pieces of meat, just because the ribs have come to the proper temperature does not actually mean they are done cooking. Instead, they need to continue to cook so the collagen breaks down, rendering a much more tender piece of meat.

There is a household phrase that continues to be a misnomer of ideal BBQ ribs: “Fall of the bone.” You do not want “Fall off the bone” ribs. These have been overcooked and feature a mushy texture – more reminiscent of a lazy crock-pot cook than a seasoned pit-master.

What Is The Difference Between Ribs And Riblets

For those who still dont know the differences between ribs and pork riblets, pork ribs are, of course, meat separated by several bones, more precisely, the rib cage. Riblets, meanwhile, are smaller cuts of the ribs.

Riblets are cut through the rib but half lengthwise through the bone. Like full ribs, riblets have bones, but they are taken from the ends of the ribs where the bones are curved.

Herby Potato Salad Ingredients

Oven

Our classic creamy potato salad isnt difficult to make, but Im going to go out there and say that this herbed potato salad is even easier! The ingredient list is not long. Heres what we add:

Potatoes I love using small baby or new potatoes for this salad. Red bliss potatoes or fingerlings are also excellent options. The smaller the better, this way they cook quickly and you dont need to spend extra time chopping.

Salty water The number one trick for the best potato salad is to salt your cooking water. I add at least 1 tablespoon to the water, which means that as the potatoes cook, they become nicely seasoned and flavorful .

Fresh lemon and red wine vinegar I love the combination of fresh lemon juice and red wine vinegar for the potato salad dressing . If you dont have both in the kitchen, dont worry, you can use just one.

Dijon mustard We use Dijon mustard a lot when making salad dressings. Its tangy and helps to make vinaigrettes creamy and emulsified.

Olive oil Mayonnaise is a popular ingredient to classic American potato salad, but for this recipe, we leave it out and instead whisk in olive oil to the lemon juice, red wine vinegar, and mustard to make a creamy vinaigrette.

How To Make Herb Potato Salad Step By Step

As Ive already mentioned, you dont need a lot of time to make this simple potato salad. Let me walk you through our method for making our herby potato salad:

Cook the potatoes. Weve found that for the best texture for boiled potatoes its best to add the potatoes whole to cold salted water and then place over a burner. Adding 1 tablespoon of salt to the water helps season the potatoes as they cook. Since we add cook the potatoes whole, we buy the smallest potatoes we can find in the store.

Drain the potatoes and let them sit for a few minutes. When you can easily pierce the potatoes with a fork, drain them. Then set them aside off of the heat so that they can cool off.

Cut the boiled potatoes for the salad. In our photos, you can see that we cut the potatoes into quarters or small bite-sized pieces. You can also slice the potatoes, its up to you.

Make the potato salad dressing. Simply whisk lemon zest, lemon juice, red wine vinegar, Dijon mustard, a pinch of salt, pepper, and olive oil together until emulsified and creamy.

Add the dressing to the warm potatoes. At this point, enough time has passed so that the potatoes are no longer piping hot, but they will still be warm. This is a good thing. The warm potatoes will soak up the dressing much better than cold potatoes would.

Stir in herbs and scallions. As a final step, we carefully toss the potatoes with lots of fresh herbs and scallions .

Yes, you can. For a slow cooker method, add one cup of bbq sauce and one cup of apple juice to the slow cooker with the prepped ribs and use the high setting for 4 hours. If you want to have the charred look, baste with bbq sauce and place under the broiler until the desired appearance is achieved.

Cut the aluminum foil packets open using kitchen shears and fold back the foil to expose the ribs.

  • Liberally coat the ribs with your favorite bbq sauce .
  • Raise the oven temperature to 400 degrees F. . Place the ribs back in the oven for 20 25 minutes.

If you want to get a little char on the ribs and have them look more like barbecued baby back ribs, set the oven to broil. Allow the ribs to cook under the broiler for 3-5 minutes . Repeat with an additional layer of bbq sauce, if desired and serve up the best baby back ribs that will ever come out of your oven.

Wrapping Pork Ribs Speeds Cooking And Increases Tenderness

Once the racks have been rubbed with the spice mixture and liquid smoke, and then left to cure for at least a couple of hours, they’re ready to be cooked.

The big question in my mind was whether to wrap the ribs in foil during the cooking process, and, if so, for how long. Wrapping traps steam, which speeds cooking and can help tenderize the meat, but it also prevents the dehydration of the surface of the meat that leads to the development of a good browned bark on the ribs.

I cooked three racks in a low, 250°F oven to compare how wrapping affected the meat. One I cooked unwrapped the entire time one I wrapped for the first two hours of cooking, then let finish in the dry oven heat and the third I cooked wrapped the entire time, running it under the broiler only at the end to give it some last-minute browning.

The fully wrapped rack ended up with an unmistakable steamed texture in the meat. That was out.

It was harder to pick a favorite between the other two. Midway through cooking, when I removed the foil from the rack I was keeping wrapped, I could see clear differences in how they were progressing: The wrapped ribs were lighter, wetter, and less browned.

*The two racks weren’t exactly the same size, and the one that cooked longer was about a half pound heavier. While that played a role in the longer cooking time, it doesn’t fully explain the significant difference.
