How To Remove The Membrane/skin Off Baby Back Ribs
This is a controversial and personal step when cooking ribs. I grew up eating ribs with the skin left on and only started removing them about 10 years ago advice from a chef. Personally, I love the chewiness of the membrane when left on, BUT, I also love the ease of eating ribs with it removed.

- Turn ribs over with bone/rack-side facing up. Carefully slide a blunt knife under the membrane at one end of the rack.
- Lift to loosen the membrane off of the bone.
- Using a sheet of paper towel to hold onto the membrane, peel it off the back of the ribs.

Removing it is tricky for some, but it is pretty easy with this trick. Simply slide a spoon between the membrane and a bone to loosen it up, then I use a napkin for grip and pull it off the slab in one strip. The napkin prevents your fingers from slipping off. You can also use a butter knife, just be careful not to puncture the thin membrane.
Once this is done the meat can be seasoned with your favorite spice rub or simply some salt, then they are ready to cook in the oven. My personal preference is my dry rub recipe containing brown sugar, paprika, onion powder, garlic powder, dry mustard, and cayenne pepper.

To make baked baby back ribs in the oven, you need to create the perfect environment for them to steam cook. Wrapping them in tin foil is the easiest way to do that. You can also use butcher paper or parchment paper if you dont like cooking with foil.
Cut off a piece of tin foil thats large enough to make a packet for the ribs. They need to be completely encased in the foil. Crimp the edges together to keep the steam in. This is how the ribs become so tender.
Place the baking sheet in the oven at 275° F. This is a bit of a set it and forget it exercise. The exact amount of time it needs to cook depends a great deal on the size of the rack of ribs youre cooking.
- It will take around 2 to 2.5 hours for a small rack or ribs.
- Medium rack will take around 3 hours. A large rack could take up to 4 hours.
- It needs to cook in the oven for a minimum of 2 hours before you check it for the first time. After that time, give it a peek.
The meat should have pulled back from the edges of the bones. If youre not sure if its done, insert a fork into the meat and give it a gentle tug. It should give easily.
If it doesnt, put it back into the oven for another 30 minutes. Remember, it could take up to 4 hours to cook the ribs to perfection, depending on the size of the ribs youre cooking.

Easy Cleanup. The ribs are cooked in a foil packet that is laid inside a 13-by-9 glass baking dish. When the ribs are finished roasting, transfer the ribs to serving plates, ladle any residual liquids you desire over the ribs, and rollup and toss the foil. The dish is now very easy to clean.
No Fuss. The ribs in the oven are sealed in foil for the majority of the cooking time. In the last 15 minutes, the packet is opened, basted with BBQ sauce, and returned to the oven. To Make The Bbq Sauce
SIMMER. In a small saucepan set over medium heat, combine the tomato sauce, honey, vinegar, Worcestershire sauce, pineapple juice, garlic, reserved 1 tbsp. of the spice rub, and reserved juices. Bring the mixture to a boil, then reduce heat and simmer for 10-15 minutes or until the sauce thickens. Remove from the heat and set aside.
COVER + GRILL. Heat a grill or place a grill pan over medium-high heat. Cover the ribs with the BBQ sauce and place them on the grill. Cook them until they are charred on both sides, about 5-6 minutes per side. Serve with additional BBQ sauce.
BBQ sauce substitutions include ketchup instead of tomato sauce and garlic powder instead of freshly minced garlic. You may want to increase the amount of garlic powder and use more of that then you would use freshly minced garlic, just because the powder is less intense than fresh garlic.
