How To Make Oven Roasted Brisket

After you purchase your brisket, you’ll need to trim the fat cap. This ensures the meat cooks without getting tough.
Next, prepare your marinade or dry rub. Evenly coat both sides of the brisket with the dry rub and wrap the whole brisket in tin foil. Let it sit in the refrigerator overnight to really absorb the flavors.
The next day, unwrap the brisket and let it come to room temperature. While the brisket is coming to temperature, preheat oven to 350 degrees F. Put the brisket fat side up, uncovered, in the oven for one hour. This is important!
After an hour, add 1 1/2 cups of beef stock to your roasting pan. The extra moisture from the stock will help keep the brisket moist while it cooks. Lower the oven temperature to 300 and cover the pan completely with aluminum foil. Put it back in the oven for 3 hours, or until fork-tender. You can use a meat thermometer to make sure the internal temperature reads at least 180 degrees F. Once it is done, remove the brisket to a cutting board and let rest. Make sure to cut brisket against the grain for the most tender piece of meat.

How Long To Cook Brisket In Oven
Total time was about 5.5 hours. It takes a while and timing will vary depending on how large yours is of course. Here is a quick step by step but there is a printable recipe card at the bottom of this post too.
Time needed: 5 hours.
Oven Baked Brisket
Mix dry ingredients together in a bowl. Rinse off brisket and pat dry with paper towels. Preheat oven to 300 degrees F.
Lay meat flat on a cutting board. Pour half rub on top and rub/pat on so theres a nice thick coat. Flip over and do the same thing on the bottom.Put foil on a baking sheet . Lay brisket on top, allow excess rub to fall off on cutting board. Pour excess from board on top of meat and press on again.
With foil cover the top and secure on the sides so its all enclosed. Bake for 3 hours.
Before taking it out add sauce ingredients into a small saucepan on the stovetop. Boil until onions are softened.Take meat out, take foil off and pour 1/3 1/2 of sauce on top of meat.
Put aluminum foil back on the top and put beef brisket into the oven again for 1.5-2 hours until meat is fork tender.Then take foil off and bake uncovered for 30 minutes so outsides can get nice and brown.
Remove pan and put foil back on top to let meat rest for 30 minutes before slicing. Serve slices with a side dish with some of the remaining sauce poured on top to make it super moist.
Cook The Brisket Overnight
Remove the pan from the fridge and place in a preheated oven at 275°F for about 1 hour per pound. Leave the pan covered with foil.
The brisket will be perfectly tender and ready to shred when the internal temperature reaches 200°F degrees with an in-oven meat thermometer. Its ok for the brisket to cook beyond 200 degrees internally, within reason.
Since the meat cooks in its own juices, the meat will be incredibly tender and should fall right apart when shredded.

How Long To Rest Brisket Before Cooking
One of the best brisket tips that I have for you is to let your brisket marinate in the dry rub brine overnight, or up to 24 hours. This accomplishes 2 things:

If you’d like a true BBQ experience with smoked brisket, feel free to add some liquid smoke. The liquid smoke would be added to the broth for the second part of the cooking process. Traditional Texas BBQ brisket only uses BBQ sauce as a dip, and not to cook the meat. If you want, serve the brisket with your favorite BBQ sauce on the side.
You can store leftover brisket in an airtight container in the fridge. To reheat, add some more beef stock to the brisket, re-wrap it in foil, and place in the oven for 20 minutes at 325 degrees.
If you don’t feel like making brisket in the oven, you can use a slow cooker. Slow cooking the brisket is basically the same process, just more time. You use the same dry rub and place the brisket in the slow cooker on low for 11-13 hours.
