What Are The Different Cuts Of Brisket
Brisket comes in three different cuts. A full packer brisket is a whole brisket, that includes both the point and flat sections. It will weigh anywhere from 8 to 12-plus pounds.
The point cut is the fatty part of the brisket, also known as the deckle or second cut. The flat is the leaner cut of the brisket and is also known as the first cut.
Whether you use the whole brisket, a flat or the point this recipe will still yield a moist, tender OMG flavorful brisket.
*For my oven-roasted beef brisket recipe either the flat or the point will work. Most grocery stores will carry the flat.
Beef Brisket In The Slow Cooker
To make this in the slow cooker, skip the water the brisket will release plenty of its own liquid and use just the soy sauce and barbecue sauce. Add the brisket to the slow cooker and pour the soy-BBQ mix on top. Cover and cook for up to 8 hours on low. We don’t recommend cooking brisket on high in the slow cooker.
Let Brisket Stand And Serve
Remove brisket from the grill. Cover with foil and let stand for 15 minutes. To serve, thinly slice brisket across the grain and pass your favorite sauce.
You don’t need a smoker to smoke a brisket as long as your gas or charcoal grill has a lid, it should work for smoking. However, if you have one of these special cookers, this is how to cook brisket in a smoker.

The first step is to mix together the dry rub ingredients. I like to rinse the meat and then pat it dry lightly with a paper towel. The dry rub will stick pretty well with a bit that will fall off.
If you rub / pat it on on top of a cutting board you can then gather what falls off and add it back on when its on your baking sheet. Its kinda messy so using tinfoil to cover your pan is kinda a must too.
- After the initial 3 hours covered in the oven youll want to boil the sauce ingredients.
- You just want the onions to soften and some of the water to evaporate so it is a bit thicker. It will still be pretty liquidy though and that is okay.

What Is Beef Brisket
Brisket is a cut of meat from the breast or lower chest of beef. This part has a lot of connective tissue so its considered a tough cut and requires the correct cooking method to make it tender.
The brisket is made up of two different muscles or parts: the point and the flat. The point cut is more elongated and is the fattier part of the brisket the flat cut is a bit leaner and is more square/rectangular looking, allowing it to lay flat. You can use either of those in this recipe.
Both parts should have a fat cap or fat layer on them. You can trim some of that back but it does render during cooking and provides a lot of flavour and moisture to the meat, so dont cut all the fat off!

Well, I will say that it isnt as intimidating as it seems if you make it in the oven. What I did was shake Tonys seasonings on the front and back of the brisket, wrapped it in plastic wrap, and allowed it to sit overnight. I brushed it with some liquid smoke so it could taste as it came out of the smoker a bit.
Then, as soon as I got up I let it sit at room temperature for a bit and baked it in the oven surrounded by onions, garlic, and beef broth for about 8 hours at 325 degrees. Trim And Prepare The Meat
Be prepared to start this process about 2 days ahead of time.
Working with a defrosted whole brisket, trim the fat cap down until you have about ¼ inch of fat remaining. The fat cap is the thick layer of fat on the meat.
You can leave the fat intact however, it may prolong the cooking time.
Then, place the meat in a large pan. I use an oversized lasagna pan from Costco. You can use a disposable aluminum pan for easy clean up or a roasting pan .

What Should The Brisket Internal Temperature Be
Because brisket is a tougher cut of meat, it must come to a higher temperature internally before the fats start to break down and tenderize. You could technically take the brisket out of the oven at 175 degrees F and it will be cooked, but if you want to get the traditional brisket stretch in each slice, you need to allow enough time for the brisket to reach 195 to 200 degrees F.
How To Cook Brisket In The Oven:
Step 1: Dry Brine the Brisket:
Remove the raw brisket from its packaging and pat it dry with a paper towel. Transfer it to a large baking sheet or roasting pan. Sprinkle the brisket liberally with coarse sea salt, making sure to get the sides as well.
Allow the brisket to sit uncovered in the refrigerator overnight , or as long as you can before cooking it in the oven.
Step 2: Season the Brisket:
At least 30 minutes before you want to cook brisket in the oven, remove it from the refrigerator to allow it to come closer to room temperature. Sprinkle it liberally with garlic powder and black pepper and a little additional salt and allow it to sit.
Step 3: Cook Brisket in the Oven:
Preheat the oven to 250 degrees Fahrenheit. Transfer the brisket to a long sheet of foil. Double wrap the brisket in foil, then place it back on the baking sheet . Roast the brisket in the preheated oven until it reaches an internal temperature of 180 to 200 degrees Fahrenheit, about 1 hour and 15 minutes per pound of meat.
Once the brisket reaches about 145 degrees F, you can uncover the foil and raise the oven temperature to 300 degrees F to allow the fat to become crispy for the last 45 minutes to 1 hour of baking.
The best way to check the internal temperature of the meat is to use a quality meat thermometer and insert it into the thickest part of the meat. Wait patiently until the thermometer gets an accurate read.
