What Are The Different Cuts Of Brisket

Best Oven Baked Brisket

Brisket comes in three different cuts. A full packer brisket is a whole brisket, that includes both the point and flat sections. It will weigh anywhere from 8 to 12-plus pounds.

The point cut is the fatty part of the brisket, also known as the deckle or second cut. The flat is the leaner cut of the brisket and is also known as the first cut.

Whether you use the whole brisket, a flat or the point this recipe will still yield a moist, tender OMG flavorful brisket.

*For my oven-roasted beef brisket recipe either the flat or the point will work. Most grocery stores will carry the flat.

Beef Brisket In The Slow Cooker

To make this in the slow cooker, skip the water the brisket will release plenty of its own liquid and use just the soy sauce and barbecue sauce. Add the brisket to the slow cooker and pour the soy-BBQ mix on top. Cover and cook for up to 8 hours on low. We don’t recommend cooking brisket on high in the slow cooker.

Let Brisket Stand And Serve

Remove brisket from the grill. Cover with foil and let stand for 15 minutes. To serve, thinly slice brisket across the grain and pass your favorite sauce.

You don’t need a smoker to smoke a brisket as long as your gas or charcoal grill has a lid, it should work for smoking. However, if you have one of these special cookers, this is how to cook brisket in a smoker.

The first step is to mix together the dry rub ingredients. I like to rinse the meat and then pat it dry lightly with a paper towel. The dry rub will stick pretty well with a bit that will fall off.

If you rub / pat it on on top of a cutting board you can then gather what falls off and add it back on when its on your baking sheet. Its kinda messy so using tinfoil to cover your pan is kinda a must too.

  • After the initial 3 hours covered in the oven youll want to boil the sauce ingredients.
  • You just want the onions to soften and some of the water to evaporate so it is a bit thicker. It will still be pretty liquidy though and that is okay.

This is a must to keep it moist AND to add a TON of flavor!

What Is Beef Brisket

Brisket is a cut of meat from the breast or lower chest of beef. This part has a lot of connective tissue so its considered a tough cut and requires the correct cooking method to make it tender.

The brisket is made up of two different muscles or parts: the point and the flat. The point cut is more elongated and is the fattier part of the brisket the flat cut is a bit leaner and is more square/rectangular looking, allowing it to lay flat. You can use either of those in this recipe.

Both parts should have a fat cap or fat layer on them. You can trim some of that back but it does render during cooking and provides a lot of flavour and moisture to the meat, so dont cut all the fat off!

Brisket nutrition is very similar to other beef cuts its high in protein and moderate in fat and zero carbs, with lots of iron, selenium and zinc and B-vitamins, especially B12 so it will give you lots of energy and antioxidants.

Oven Baked Beef Brisket Recipe Faqs

How long does it take to cook a beef brisket in the oven?

It takes about one hour per pound of beef brisket at 275F. It is hard to cook a tender brisket smaller than 3-4 pounds so plan for leftovers.

What temperature do I cook brisket at in the oven?

Cook brisket at 325F for the first hour to get it going. Then reduce the temperature to 275 degrees F and cook it low and slow for the rest of the time.

Do I cook the brisket fat side up or fat side down?

Cook brisket fat side up. And pick a marbled brisket with fat. Don’t take the fat off the brisket. Cooking brisket fat side up will shield the meat from drying out and keep it moister.

Why did my brisket turn out dry?

Maybe the brisket was too small and overcooked, maybe your oven runs hot, maybe it wasn’t covered tight enough with aluminum foil, or maybe it didn’t have enough marbling or fat. Unfortunately, it’s hard to say.

How To Carve Brisket

This step is really important. Brisket has a ton of muscle fibers that run parallel to each other. Thats the grain. If you cut with the grain, youd end up with long strands of fiber that are tough and chewy, even if you cook the brisket perfectly. When you position your knife at a T with the grain and make perpendicular slices, youll shorten each muscle fiber to the length of the slice. These shorter fibers are easier to chew, and thus more tender.

Slow Cooked Brisket In The Oven

Ive been meaning to do a beef brisket recipe on the blog for A LONG time! I know its something my readers have asked for and also because many people are a little intimidated by this cut of meat.

Many think that the brisket requires a BBQ or smoking or that it takes a very long time. But, while it is one of those cuts that needs a little love and time to cook, its actually very easy to handle and I will show you how to make a beautiful baked brisket in the oven.

In this recipe, we are slow-cooking the brisket in the oven for 3 hours on low to moderate heat. Its half-braised in a delicious broth, which slowly cooks down to form the most decadent reduction our brisket sauce.

Once youve done all the prep, you only need to check on the brisket a few times otherwise, its a very simple process. DO NOT FEAR THE BRISKET!

How Do You Cook A Beef Brisket

Well, I will say that it isnt as intimidating as it seems if you make it in the oven. What I did was shake Tonys seasonings on the front and back of the brisket, wrapped it in plastic wrap, and allowed it to sit overnight. I brushed it with some liquid smoke so it could taste as it came out of the smoker a bit.

Then, as soon as I got up I let it sit at room temperature for a bit and baked it in the oven surrounded by onions, garlic, and beef broth for about 8 hours at 325 degrees. Cooking beef brisket in the oven takes about an hour per pound, and the internal temperature reaches 185 degrees, determined by a meat thermometer and fork tender. Like most cuts of beef, once it is cooked, let it sit uncut and covered with aluminum foil for an hour until the juices can settle back into the meat for maximum flavor.

What To Serve With Brisket Best Sides For Brisket

Traditionally, smoked or BBQ-ed brisket is served with all the expected trimmings of coleslaw, fries, pickles, corn on the cob, potato salad or baked potatoes, collard greens, macncheese and so on.

If you eat bread, soft bread rolls, wraps or tacos can be used as vessels for the brisket. For a lower-carb meal, opt for a nice coleslaw and sweet potato baked fries or a nice cauliflower mash on the side.

Texas brisket is often served with any or some of the following: mac and cheese, potato salad, pinto beans, Sweet Potato Spoonbread or sweet potatoes of some sort, okra, stewed greens, and pickled things. Trim And Prepare The Meat

Oven Baked Beef Brisket | Best Brisket Recipe

Be prepared to start this process about 2 days ahead of time.

Working with a defrosted whole brisket, trim the fat cap down until you have about ¼ inch of fat remaining. The fat cap is the thick layer of fat on the meat.

You can leave the fat intact however, it may prolong the cooking time.

Then, place the meat in a large pan. I use an oversized lasagna pan from Costco. You can use a disposable aluminum pan for easy clean up or a roasting pan .

What Should The Brisket Internal Temperature Be

Because brisket is a tougher cut of meat, it must come to a higher temperature internally before the fats start to break down and tenderize. You could technically take the brisket out of the oven at 175 degrees F and it will be cooked, but if you want to get the traditional brisket stretch in each slice, you need to allow enough time for the brisket to reach 195 to 200 degrees F.

How To Cook Brisket In The Oven:

Step 1: Dry Brine the Brisket:

Remove the raw brisket from its packaging and pat it dry with a paper towel. Transfer it to a large baking sheet or roasting pan. Sprinkle the brisket liberally with coarse sea salt, making sure to get the sides as well.

Allow the brisket to sit uncovered in the refrigerator overnight , or as long as you can before cooking it in the oven.

Step 2: Season the Brisket:

At least 30 minutes before you want to cook brisket in the oven, remove it from the refrigerator to allow it to come closer to room temperature. Sprinkle it liberally with garlic powder and black pepper and a little additional salt and allow it to sit.

Step 3: Cook Brisket in the Oven:

Preheat the oven to 250 degrees Fahrenheit. Transfer the brisket to a long sheet of foil. Double wrap the brisket in foil, then place it back on the baking sheet . Roast the brisket in the preheated oven until it reaches an internal temperature of 180 to 200 degrees Fahrenheit, about 1 hour and 15 minutes per pound of meat.

Once the brisket reaches about 145 degrees F, you can uncover the foil and raise the oven temperature to 300 degrees F to allow the fat to become crispy for the last 45 minutes to 1 hour of baking.

The best way to check the internal temperature of the meat is to use a quality meat thermometer and insert it into the thickest part of the meat. Wait patiently until the thermometer gets an accurate read.

Step 4: Let Brisket Rest:

How Long To Rest Brisket Before Cooking

One of the best brisket tips that I have for you is to let your brisket marinate in the dry rub brine overnight, or up to 24 hours. This accomplishes 2 things:

  • The dry rub brine penetrates the meat for more flavor.
  • Dry brining overnight dries out the outside of the meat, allowing it to sear better the next day.

    Cutting Brisket Against The Grain

When you read a recipe and it tells you to cut a piece of meat against or across the grain, it means you should slice the meat crosswise, across the fibers of the meat. Cut of beef or other meat like brisket which are from a much-used muscle of the cow develop strong fibers, which will soften with cooking, but remain intact. Cutting the slices of meat perpendicular to the fibers means that each slice will have only short bits of fiber going crosswise, and the meat will feel easier to chew and more tender. Otherwise long strands of fibers will cause the meat to feel chewy and even tough in your mouth.
