How To Cook Juicy Pork Chops In The Oven

A marinade or brine isnt necessary for pork chops. You can simply sprinkle seasoning on the pork before cooking. However, for incredible flavor and moisture, a brine or marinade is a great option.

To brine pork chops: Place pork chops in a large baking dish. Combine 3 cups water and 3 tablespoons salt. Pour water solution over pork chops. Add peppercorns, bay leaves, crushed garlic, and any other whole spices for flavor. Brine in the refrigerator 1 to 4 hours.

To marinate pork chops: Place pork chops in a large baking dish or zip-top plastic bag. Combine your preferred marinade ingredients in a bowl. Pour marinade over pork chops in the baking dish or into the plastic bag. Marinate pork chops in the refrigerator 1 to 8 hours.

Why Are My Thin Pork Chops Tough

Because pork chops are such a lean cut, they are relatively quick-cooking and prone to overcooking. When theyre cooked for even a few minutes too long, whether its in the oven or on the stovetop or grill, theyre quick to dry out, and you guessed it become tough, chewy, and less than appealing.

    • Bone-In Pork Chops: Try to find pork chops that are at least 1 inch thick because thicker chops are less likely to dry out when cooking. I prefer using bone-in pork chops because the bone helps to keep the meat moist. If youd like to use boneless pork chops, just know that they may cook a bit faster.

Pork chops are great in the oven if you do not over cook them. They are great after applying a marinade for added flavor and to avoid bland pork chops. Be sure to use thicker pork chops and let them bake just until the internal temperature reaches 145F. This takes about 20 minutes at 400F oven temperature.

When you bake pork chops in the oven, they are not going to get browned. I suggest putting them under the broiler for a few minutes if you want that nice looking browned pork chop.

Heres How To Make This Recipe

What truly makes this a weeknight meal is the ease of preparation. Besides the time spent marinating, everything comes together very quickly with little active time. Here are the steps to make these pork chops:

  • Dry brine the pork chops. Place the pork chops on a pan, ensuring they do not overlap. In a small bowl, combine the salt, thyme, rosemary, sage, and garlic. Once the salt and spices are mixed, sprinkle each pork chop with the dry brine and coat all sides. Cover the pork chops and place them in the refrigerator to brine for six to 24 hours.
  • Brown the pork chops. Once the pork chops have been brined, to an oven-safe skillet on the stove, add the butter. Let the butter melt, then add each of the pork chops. All four should fit within the skillet. When each pork chop is browned on one side, flip it and brown it on the other for about four to six minutes per side.
  • Chop up the apples. Remove the core from each apple, then slice the apple in half from top to bottom, and then each subsequent half in half again, resulting in a quartered apple.
  • Add in the apples and cook. To the skillet with pork chops that have been browned on both sides, nestle in the chopped apples. Push the apples into the spaces between the pork chops. Then place the entire skillet in the oven and bake at 375°F for 12 to 16 minutes.

    Why Let Pork Chops Rest

Pork Chops in the OVEN Recipe, Extremely Tender & Juicy

Not letting pork chops rest is among the biggest mistakes you can make when cooking this protein! If the meat is sliced immediately after being removed from the heat source, the juices are still running at peak temperature and will literally spill out onto the plate, both making a mess and making your meal less tender and juicy. By resting the chops for just 3 minutes, you give the juices a chance to be reabsorbed.

    • Bake them at high temperature. This will caramelize the outsides and sear in the juices.
    • Dont overcook pork chops. Take them out of the oven when the internal temperature is between 145 and 150° F.
    • Let the baked pork chops rest for 5-10 minutes before slicing. This is the key to moist, juicy pork chops. You can loosely cover them with foil while they rest if you wish.
    • Buy thick-cut pork chops that are at least 1-inch thick. Thin pork chops tend to dry out more easily.
    • I usually cook boneless pork chops, but bone-in pork chops can be even more juicy because the bone helps to keep the meat moist.

    How To Grill Pork Chops

I tested this recipe on an outdoor gas grill. You can also use a charcoal grill or grill pan. Follow these tips for the best grilled pork chops:

    • Thick pork chops are best for grilling because they wont dry out easily. Choose pork chops that are at least 1-inch thick for best results.
    • Bone-in or Boneless Pork Chops? Bone-in pork chops are best for making juicy grilled pork chops, because the bone helps to prevent the pork chops from drying out. You can also use thick boneless pork chops.
    • You can season the pork chops with the pork chop marinade in this recipe or this simple Pork Chop Seasoning. Either way, I recommend marinating your pork chops for the best flavor. After putting the pork chops in the marinade or coating them with the seasoning rub, marinate them in the refrigerator for at least 1 hour and up to 8 hours.
    • How long to grill pork chops: First sear pork chops over medium-high heat for 2 to 3 minutes per side. This will create nice grill marks and also helps to seal in the juices. Then reduce the heat to medium and continue grilling for 4 to 7 minutes per side, until the internal temperature reaches 145° F. The exact cook time depends on the thickness of your chops. Boneless pork chops will take a few less minutes to cook through.
    • Let them rest for 5 minutes before serving. This resting time allows the juices to redistribute throughout the meat so that your pork chops turn out tender and juicy.

This Easy Weeknight Meal Cooks Quickly

I think we can all agree that we love to feel the seasons through food. Personally, when the air starts to chill, I instantly think of foods with warm spices and ingredients that lean towards comfort.

Pork chops may not be your first thought, but when apples in the form of applesauce are added, the meal immediately tastes seasonally like fall. Boneless pork chops are cut from the loin with a minimal fat cap and a small amount of marbling throughout, which gives them good flavor while also being lean. Since theyre boneless, they cook relatively fast, making this recipe perfect for a weeknight meal.

When working with any cut of meat, salt is what can really work to enhance the flavor. And the perfect way to employ salt for this purpose is with a dry brine. Rather than using liquid like a wet brine would, a dry brine is exactly how it sounds: dry! Usually, a dry brine pairs salt with herbs or spices. This mixture is sprinkled over the meat, working into the outside of the meat as it brines. This keeps the meat juicy and super flavorful.

Apples are cooked alongside the meat and then mashed into a quick applesauce. At this point, you have a perfect meal.

How to Make Pan-Seared Thick-Cut Boneless Pork Chops

This recipe uses 3/4 thick boneless chops, if your chops are thicker or thinner, the time will need to be adjusted.

The brine keeps these tender and adds flavor. If you skip the brine you will need to add salt to the rub.

Do not overcook! Use a meat thermometer to ensure the pork reaches the right temperature without overcooking.

Pork should reach 145°F, just like pork tenderloin, its ok if the chops are a little bit pink in the middle.

Tip: Choose pork chops uniform in size and thickness so they all cook at the same rate.

Do Baked Pork Chops Need To Be Covered

Some baked pork chop recipes do require that the pan is covered with either foil or a lid. It creates steam and ensures that the meat is tender and juicy. Those recipes typically require a long cook time and may add vegetables to the pan, and some uncover the chops to finish browning them at a higher temperature. This recipe takes a fast-cook approach, searing the chops first to lock in the juices then roasting them quickly. Between searing and roasting, the total cook time is about 16 minutes, so there’s no need to cover the pan.

    Ingredients & Common Substitutions

Here is a visual overview of the ingredients youll need for this recipe. Scroll down to the printable recipe card at the bottom of this post for quantities!

    • Pork chops: Do your best to purchase chops that are at least 1-inch thick. 1 and 1/4 inches is even better. It may seem like thinner pork chops would cook more quickly, but the downside is that they dry out far more easily, and theres not much less pleasant than that! My go-to for high-quality thick-cut pork chops is ButcherBox.
    • Spices: paprika, onion powder, garlic powder, oregano, kosher salt, and fresh-cracked black pepper combine to make the most enticing rub that perfectly complements porks mild flavor.

For a tasty variation, try adding 1-2 tablespoons of brown sugar to the seasoning mixture for a touch of sweetness. The sugar also will lightly caramelize as they sear and bake, adding more texture.

Tips To Cook Juicy Boneless Pork Chops:

    • Preferably use fresh, never frozen pork chops.
    • Bring pork chops to room temperature before roasting. Take them out of the fridge 30 minutes before you plan to cook them.
    • Bake at 400 F for 7 minutes per 1/2-inch thickness of the pork chops. Porks internal temperature needs to be 145 F in order for the meat to be safe to eat.
    • Bone in pork chops require some extra cooking time compared to boneless pork chops. You may want to add an extra minute for each 1/2 inch if youre using bone-in pork chops.
    • Use a baking dish with walls, instead of cookie sheet, since the meat releases some juice, that we would like to preserve. This way the meat baking in the juice stays moist.
    • All you need for seasoning the pork chops is a blend of simple spices salt, pepper, garlic powder, onion powder and paprika. Rub pork chops with the seasoning and let them sit for at least 5 minutes if you have the time.
    • Dont cut the baked pork chops right away. Let the meat rest for 5 minutes, before you bake.

Can You Cook Pork Chops From Frozen

Thin Pork Chop Recipes In The Oven

You can bake pork chops from frozen, but I dont recommend it. Cooking meat direct from the freezer will result in uneven cooking, meaning some parts will end up over cooked.

If you have frozen pork chops, thaw them first in cold water before proceeding with the baked pork chop recipe. Besides, since you are marinating the meat anyway, you can let the chops thaw in the marinade in the fridge overnight if you have the time.

    Oven Baked Boneless Pork Chops

    · Last Modified: March 7, 2019

This recipe for oven baked boneless pork chops is one of my absolute favorites. Well use some brown sugar, ketchup and those little crispy onions to make an outstanding pork chop dish, right in the oven. No reason to brown in a pan, no need to fire up the grill. The prep takes 5 minutes and cooking just about 30 minutes.

Those little crispy onions that are so popular on top of green bean casseroles are a big star of this recipe. When combined with the awesomeness of the brown sugar and ketchup, it creates a sweet and savory flavor that lends itself perfectly to the pork chops.

For the last couple of minutes I like to put the pork chops under the broiler. This thickens the sauce and caramelizes and gives it just enough char to really bring out the flavors. I love to have extra sauce to put on each bite too. The sweetness of the brown sugar with the ketchup is simply outstanding. You can easily double the amount of sauce you make to keep plenty on the side.
