There is nothing better than crispy pork chops. We make them all the time, but traditionally always shallow fried them. We thought frying was the only way to have perfectly crispy pork chops. Boy, were we wrong! We perfected this recipe to give you the most juicy meat on the inside, while maintaining the crispiness on the outside. And we sure do love saving on the oil as well. This is a healthy twist on a classic fried pork chop, that doesnt taste healthy at all!

Sear Pork Chops Before Baking

The real key for irresistible oven-baked pork chops is searing them in a skillet first. In an extra-large skillet, heat one tablespoon oil over medium-high heat. Add two bone-in chops or up to four boneless pork chops. Cook for six minutes or until the surfaces are gorgeously browned. Flip the chops as needed for an even sear. Doing this step before baking makes a big difference because of the Maillard reaction it causes, which creates extra flavor and deliciousness.

What Do I Need To Make It

Heres what youll need to make the panko Parmesan baked pork chops recipe.

  • Panko Bread Crumbs these Japanese style bread crumbs are wonderful for their light flaky texture and the extra crispiness they offer to foods that are fried.or baked. If you dont have Panko then dont sweat it. Just use regular bread crumbs instead.
  • Freshly Grated Parmesan Cheese the fresh grated cheese adds wonderful flavor. Dont have a Parmesan wedge to grate, just use the pre-grated variety. I do love keeping a small wedge of Parmesan on hand to grate myself. It is delicious but is a bit pricey. I find that it does last quite a while though.
  • Mayonnaise a small amount of your favorite mayonnaise is the perfect coating for the pork chops so that the breading mixture adheres to the pork. I prefer Dukes mayo as my brand of choice because of the extra egginess and twang.
  • Pork Chops boneless or bone in work well. Just use what your family enjoys most. Bone in tend to cook a tad bit faster and have more flavor. Boneless are often preferred and easy to handle, particularly for kids. I had one pound of pork chops, which was 4 boneless that were about an inch thick.
  • Salt and Pepper to season the pork chops.
  • Baking Sheet lined with foil for easy clean up.
  • Cooking Rack like an oven safe cooling rack to elevate the pork chops for air circulation.
  • Cooking Spray I used regular ole Pam to lightly spray the tops before baking to help with browning.

How Long To Bake Pork Chops

Depending on the side dish being baked with these pork chops you can alter the cooking times for the oven temperature.

But since the bake time will also depend on thickness, use a meat thermometer to test for doneness. Pork chops should be baked to an internal temp of 145°F.

  • 450°F bake 14-16 minutes
  • 400°F bake 17-19 minutes
  • 375°F bake 22-25 minutes
  • 350°F bake 35 minutes

I broil for the last 2 minutes to add a little color and seal in the juices!

How To Reheat Leftovers

Microwave Place pork on a plate and heat for 45 seconds or so. Then carefully flip over and heat for additional time until your chops are warmed.

Oven Preheat the oven to 350 degrees Fahrenheit. Place pork chops in a single layer and then bake for 10-15 minutes or until warmed up.

The oven method will give you a crunchier texture on the breading. Where as the microwave can be a bit soggy,

Typically when breading any kind of meat, eggs are used to hold the breading and seasonings on. For this recipe I use a little bit of a different method that’s just as effective!

For this recipe, the easiest way to make the breading stick to the pork chops is to smother them in mustard, then coat the chops in the breadcrumb mixture. The mustard will act as a sort of glue to hold the breadcrumb mixture on the pork chops instead of eggs. The mustard will give the pork chops a wonderful flavour and also hold the breadcrumbs in place just as good as egg do!

Heres How I Make My Bread Crumbs

I do make my own bread crumbs, using a magic bullet. However, I did not take any pictures of that but this is how I do it. I toast a couple of pieces of bread, let them cool, break them up to fit into my bullet and I grind them up for a few seconds. I than store them in an air tight container and use them as needed. I have tried using store bought bread crumbs, but I didnt like how fake and stale they tasted so I have just always stuck to making my own.

There are a few different ways to reheat leftover pork chops, but our favorite is in the oven. Preheat your oven to 350 degrees and lay the pork chops on a baking sheet. Cook for about 15-20 minutes or until theyre heated through. You could also use the microwave just place them on a microwave-safe plate and cook for a minute or two, depending on how thick they are.

How To Make Baked Breaded Pork Chops

To make the whole process easier, prepare your baking sheet, place your ingredients in separate shallow bowls or pie plates, and place them in an assembly line on your counter.

You can season the bread crumbs in the bowl.

Then begin breading your pork chops. First, pat each pork chop dry using paper towels.

Then, dip pork chops into the beaten egg mixture.

Shake off excess beaten egg from the pork chop. Then, dip it into the seasoned bread crumbs mixture.

So, how do you get breading to stick to pork chops? The egg wash helps the breading to stick to the pork chops.

I also like to press the breadcrumbs into the pork. This helps it stick better.

Just don’t be tempted to pile too much breading onto the chops. The breading on top will brown, but the breading closer to the chops will be a little soggy.

I like to line the baking sheets with foil or parchment paper. But that’s optional. I’m just all about easy clean-up!

Spread about 1 teaspoon of olive oil or vegetable oil over the baking sheet. You just need enough oil to lightly cover the baking sheet. Or, spray it with non stick cooking spray.

This will help prevent the crumbs from sticking. If you apply a very light layer, the crumbs won’t get soggy!

Next, lightly spray the tops of the pork chops with cooking spray or olive oil spray. This helps the breadcrumbs turn golden brown as they bake. You can also drizzle melted butter over the chops if you want.

    Why use buttermilk for a marinade? Buttermilk is slightly acidic and has enzymes which help tenderize the pork. Its a gentle marinade and it wont make the pork mushy if you want to marinate the pork overnight. Plus, a buttermilk marinade is very easy, just pour it on, nothing to mix up. I use a similar marinade for my easy baked chicken parmesan.

    After the pork has marinated, remove it from the marinade and let the excess drip off. You dont have to wipe it off. The buttermilk that remains on the pork chops will help the breading stick.

    Mix the breading ingredients together: panko, Parmesan cheese, chopped parsley, mustard powder, salt and pepper. Use a shallow bowl so you have room to dredge the pork chops in it. Press one chop at a time, both sides, in the breading mixture. Arrange them in a single layer on a baking rack set inside a baking pan .
