Breaded pork chops are a quick and tasty main course: breaded and baked pork chops that are soft inside and crispy outside.
Pork chops are made from the pork rib, and the layer of fat that surrounds them makes them very tender.
How To Get Breading To Stick Well
To get the breading to stick well, we use a quick egg wash and a double dredging.
Readers Tip: Trim off any excess fat around the outside. While this fat is delicious and crispy when sautéed, it is unnecessary on oven fried pork chops. The fat wont become crispy or brown like in other recipes.
Heres What You Need To Remember When You Make These Crispy Breaded Pork Chops At Home:
Use bone-in chops of the same thickness, and in my opinion the thicker the better. I usually ask my butcher to prepare chops that are at least one-inch thick with just a sliver of fat running along the edge. That fat will crisp up during the baking, adding a delicious flavour.
Ive made this recipe using everything from fancy gluten-free breadcrumbs and Japanese panko to store-bought and homemade versions that I made in a pinch. Mixing the breadcrumbs with fine-chopped fresh herbs and grated cheese adds a wonderful flavour.
Baking the breaded chops in a hot oven ensures that they come out with that all-important crispy-outside-juicy-inside finish. I also think this is the perfect occasion to use the convection feature on your oven, if you have it. Just make sure you elevate the breaded chops on a wire rack that sits within your baking sheet so that the hot air can circulate around the top and bottom of the chops.

What Is The Secret To Making Tender Pork Chops
My secret is marinating in olive oil.
The marinade is used to make the meat tender and fragrant.
In this way the muscle fibres soften and absorb the smells and scents of the liquid.
Once you have prepared and poured the oil over the meat, massage the pork thoroughly with your hands so that it takes on a uniform flavour.
Then cover the dish with cling film and leave to rest in the fridge.
The Best Pork Chops For Breading

I recommend using boneless, center cut pork chops that are about ¾-inch thick and about 5 ounces each. While any size and type of pork chop will work for breading, I find that this particular cut cooks through in just the right amount of time. The breading has a chance to turn crisp and golden brown, but it doesnt burn before the pork is done.

Many little tricks ensure that this pork chop recipe is the perfect weeknight meal. From properly seasoning the breadcrumbs, browning the chops on the stove first to create a crispy crust, and then finishing them in the oven to keep them moist and juicy.
Be sure to choose pork chops that are center cut and at least 1-inch thick, as thinner chops will require less cooking time and can easily dry out. Youll know the chops are ready when a meat thermometer inserted in the center reads 145 F. Dont skip the step of reading internal temperature as this is the only real way to ensure you havent under- or over-cooked your chops.

Baked Breaded Pork Chop Recipes
Preheat oven to 400° convection or 425° conventional.
Trim pork chop of the fat rim. Pat dry with a paper towel.
Prepare two trays. First, with one egg whipped with a teaspoon of water. Second, with ¼ cup of Italian Panko Bread Crumbs, ¼ cup flour, 1 ½ teaspoon seasoning salt , and ¼ teaspoon black pepper.
Dredge a pork chop in the egg mixture. Be sure to cover all surfaces. Remove with a fork and allow to drain for a moment.
Dip the egg-coated chop into the flour mixture. Coat all sides, remove with a fork and shake to remove extra flour.
Set the chop on a plate or chopping board. Repeat for the next chop. We want to coat to set up for a few minutes.
Over medium-high heat, add 2 tablespoons of oil to an oven-safe, non-stick skilletcast iron preferred. When hot and the oil is shimmering, move the chops to the pan with a fork.
Brown each side of the chop for 2-3 minutes until almost the final color you want. Use a fork to flip by poking the meat edge and not anything to grab the meat and pull off the coating.
Check the internal temperature, do one last flip of the pork, and place in the preheated oven until the internal temperature you want. About 10 minutes for 145°, but this will vary a lot in time, so you must use a meat thermometer and get the final temperature you want. You can always cook more but can not uncook meat.
Allow to rest on a plate for 5 minutes before cutting.

How Do You Get Breading To Stick To Pork Chopshow To Make Breaded Pork Chops Without Eggs
Typically when breading any kind of meat, eggs are used to hold the breading and seasonings on. For this recipe I use a little bit of a different method thatâs just as effective!
For this recipe, the easiest way to make the breading stick to the pork chops is to smother them in mustard, then coat the chops in the breadcrumb mixture. The mustard will act as a sort of glue to hold the breadcrumb mixture on the pork chops instead of eggs. The mustard will give the pork chops a wonderful flavour and also hold the breadcrumbs in place just as good as egg do!
What Is In Poultry Seasoning

I used poultry seasoning in this recipe, which is a combination of dried basil, rosemary, sage, marjoram, thyme and oregano.
You can , but even if you don’t have poultry seasoning on hand, you can easily swap in any combination of these herbs, or even just one of them, and it will still turn out great!

It will definitely work with other types of pork chops , but youll need to do a little experimenting to see how long they need to bake. A meat thermometer is super helpful, and youre looking for the pork to be between 140-145°F in the center.
- Breadcrumbs for this recipe, I use plain traditional breadcrumbs, but feel free to use panko instead.
