Best Practices For Nonstick Pans

Over the course of testing four different meals on a dozen different pans, we learned some things about nonstick pans that we hadnt known before. Most quality nonstick frying pans, it turns out, work best on medium-low heat. Make the stovetop too hot and you can burn yourself, overcook your food and wear down the pans nonstick properties faster, according to manufacturers.

Another thing? Not all frying pans are dishwasher-safe even the ones that claim to be will probably last longer if you stick to hand-washing. When youre ready to scrub a pan in the sink, make sure it has fully cooled. This not only keeps you from getting scorched, but will keep the nonstick coating from breaking down. Youll want to steer clear of abrasive sponges, which can also deteriorate the coating at a faster rate. Stick to soft-to-mild scrubbers if food is really stuck or burnt onto the pan, you can fill it with a quarter cup of baking soda and about three inches of water, then simmer the mixture for about 10 minutes. This should loosen up even the most stubborn of burns.

The utensils you use on pans can be make-or-break: Some pan instructions warn that metal spatulas can instantly damage pans, and our tests proved that even a slight scrape of a fork can, too. While you may commit to only using wood or plastic on your cookware, this can be a tough rule to enforce when there are other people using your pans. Scratch-resistant pans, in this case, can serve you well.

Can Tefal Induction Pan Be Used On A Ceramic Hob

Yes, it can. In the evolution of fitted cooktops, the ceramic hob is placed between the gas or electric hob and the latest induction hob. The smoky glass surface of a ceramic cooktop looks identical to the induction hob.

Tefal pans have always moved with the times. Before the induction hob, they were designed to be compatible with the ceramic stovetop. The base of each pan became noticeably thicker to provide a stable connection to the heat source below the ceramic glass.

A layer of strong steel is included for strength, while aluminium ensures effective heat distribution. The design is virtually the same as for an induction pan. If your Tefal pans are suitable for an induction hob, they should also work perfectly with a ceramic hob.

How To Protect Skillet Handles In A Hot Oven

We discovered a method for protecting skillet handles from oven temperatures in excess of their rated ovensafe temperatures.

When we tested nonstick skillets in 2010, the manufacturer of our winner, the T-fal Professional Non-Stick Fry Pan, 12.5 Inches, informed us that the pan was ovensafe to 450 degrees. The company recently updated this limit, stating that the silicone covering on the handle could be damaged if heated above 350 degrees. Since we have recipes that require putting a nonstick skillet in an oven hotter than that, we wanted a method for protecting the handle in ovens running up to 450 degrees.

We tried simply wrapping the handle with a double layer of aluminum foil, but in a 450-degree oven this bought us only a few extra minutes before the handle exceeded 350 degrees. A better approach was to wrap the handle in a double layer of wet paper towels and then cover the towels with a double layer of foil. As long as there was water within the foil jacket , the temperature of the handle couldnt exceed 212 degrees . We found that the handle stayed safely below 350 degrees for a solid 30 minutes in a 450-degree oven and for well over an hour in a 425-degree oven, after which the water boiled away.

This trick will also work with any pot or pannot just our winning T-fal skilletthat needs to go into a hot oven and has a handle that is ovensafe only up to 350 degrees.
