At the Chicago Pizza and Oven Grinder Company in the Lincoln Park neighborhood, people will wait for hours to taste the pizza pot pie. Heres a look at what makes the dish so popular.
Its made from scratch with triple-raised Sicilian bread-type dough a homemade sauce consisting of olive oil, fresh garlic, onions, green peppers, whole plum tomatoes and a special blend of cheese sausage made from prime Boston butts and doorknob-size, whole fresh mushrooms.
The pizza pot pie is cooked in a bowl and flipped table-side by the server. It comes in two sizes: a half-pounder and a one-pound serving. You can even bring home a frozen pie to enjoy later.

Equipment And Ingredient Notes
- The bowl. I am using a oven safe bowl with a 6 opening. My recipe serves two. Any oven-safe bowl with a wider opening works. For individual pizzas, I love these individual Mason and Cash oven-safe bowls and I would divide the dough into quarters .
- Pizza dough. The first thing we are going to do is either make or purchase pizza dough. Ive got a great, tried-and-true homemade pizza dough recipe or purchase your favorite from a store or pizzeria. It all works!
- Canned tomatoes. For my pizza pot pie recipe, I love using these Baby Roma tomatoes from Mutti. They come in a small can that is loaded with little Roma tomatoes. And because they have a super thin skin, theyre perfect for to make this quick, thick sauce.
- Cheese. My version of Chicago upside down pizza uses a thicker cut, sharp provolone. The Picante Provolone from Boars Head is my absolute fav and I get it cut at the deli its totally worth seeking out.

On February 14, 1929, Al Capones gang left its South Side base on a trip to the North Side for a rendezvous with Bugs Morans gang. Moran had ordered two unsuccessful assassination attempts on Capone and had taken to repeatedly insulting Capone in the press, and Capone decided it was time to teach Moran a lesson. So a group of Capones men headed to the S.M.C. Cartage Company, which was a known front for a bootlegging operation. Two of the South Siders were dressed as police officers, and they ordered seven of Morans men to line up against a wall. At that point, a couple more of Capones men came in and all of them opened fire with machine guns and shotguns. Capone was in Florida at the time and was never arrested for his involvement. Indeed, Capone remained free until Kevin Costner came along and put him away for tax evasion.
The gruesome murders are now known as the St. Valentines Day Massacre and took place at 2122 North Clark Street. Across the street, at 2121 North Clark, on a site where a couple of Capones men allegedly sat as lookouts 80 years ago, sits the Chicago Pizza and Oven Grinder Company, which has been serving up pizza pot pies since 1973. I first discovered wood fired brick ovens on cooking shows a few years ago. I have always wanted one since then. I did some research looking for the best one and the same name kept coming up: Chicago Brick Oven.
I got my oven in April of 2015 and started cooking right away after I installed it and followed the included instructions. The oven and the pizza I cooked became the sensation of my small town.

- Once the bowl has cooled just a bit, using your hands to carefully loosen the edges of the dough from the sides of the bowl.
- Take a dinner plate and place it over the top of the pizza dough.
- Using hot pads to simultaneously hold the bowl and plate, gently flip them over with the bottom of the bowl now facing up.
- Run a small spreader or butter knife around the bowl and dough loosening the bowl.
