Many home cooks rely on the visual test to see if their chicken is done. Simply looking to see if there is any pink left in the center.

Unfortunately, this is not the most reliable way to check if the meat is cooked. Chicken meat could appear to no longer be pink but still not have reached the recommended internal temperature. Moreover, by cutting into the chicken you release all the juice and may be left with a dry piece of meat.

The best way to check the internal temperature of chicken is to use a meat thermometer. If you dont have a meat thermometer yet, I encourage you to add one to your kitchen tools.

A meat thermometer is one of the most important tools you can have in your kitchen. It will ensure that any type of meat you cook is always cooked exactly to the recommended internal temperature.

You can buy a meat thermometer online at places like Amazon. Most stores like Walmart and Target also carry inexpensive thermometers.

When Is It Done

While the safe temperature for chicken is 165°F according to the USDA, you can remove it from the oven at 160°F and the temperature will rise 5°F more while resting.

If you dont have a thermometer, look carefully at the juices coming out of chicken. Theyll run perfectly clear when the meat is cooked. Any tinges of red or pink indicate the meat needs more time.

How To Make Baked Chicken Breast Thighs Wings Or Legs

We usually buy whole chickens and either cut them up ourselves or have the butcher do it for us. It’s cheaper that way, and we get giblets for gravy. You can do that or just use a package of whatever chicken parts you likemake baked chicken breasts for white meat, and baked chicken thighs and legs for dark.

This way of cooking chicken couldn’t be more straightforward. It’s especially welcome on days when you’re busy and just want to put good food on the table.

  • Add herbs, peppercorns and a couple of slices of onion.

However, due to the additional possibility of salmonella, it is even more important to check that chicken and turkey are fully cooked.

    Since turkeys are commonly cooked whole for Thanksgiving, many of us are familiar with checking the internal temp of a turkey using a meat thermometer. However, since chickens are more frequently cooked in individual parts it is less common to think about using a thermometer to check the internal temperature.

    Just like a thermometer would be used to check the temperature of a steak though, the same should be done for pieces of chicken.

    Internal Temperature For Dark Meat Chicken

    Dark meat chicken is technically good to eat at 165°, but its better to reach a minimum internal temperature of 175° or higher . This type of chicken has more connective tissue than white meat chicken, so it needs higher temperatures to break down. Its similar to lean beef tenderloin versus fatty beef brisket: Beef tenderloin tastes great at rare or medium-rare temperature, but beef brisket needs to reach 195° to 200° to become tender.

    Using lower, slower cooking methods is best for dark meat chicken. Roast dark meat in a 300° oven, braise it in a flavorful liquid or cook it over indirect heat on the grill.

    Make Your Range Work Smarter, Not Harder

    Putting chicken in the oven should be done at 190C. This is the safest temperature for food. This temperature is safe for chicken and is often recommended for cooking poultry. If cooked for longer, chicken becomes dry and tougher. If cooked for less time, chicken becomes moist and tender. We recommend cooking chicken in an oven at 190C for 45-60 minutes. If you cook it for longer, the food can start drying out. You may also find chicken is tough if cooked for too long. And if you cook it for less time, it can be too moist. Always keep an eye on the chicken while cooking. The oven should be ventilated as you cook.

    Tips On Using A Food Thermometer

    • According to the USDA, chicken must be cooked to the minimum safe temperature of 165 F . You may choose to cook it to reach a higher temperature.
    • Insert the thermometer into the thickest part of a thigh, but not touching bone or gristle.
    • Check the chicken near the end of the cooking time, before the estimated time you expect the roast to be done.
    • If the chicken is stuffed, the stuffing must reach at least 165 F . Even if the chicken meat registers 165 F or more, continue cooking the chicken until the stuffing is done. To check, insert the thermometer into the center of the stuffing.
    • If you are roasting chicken parts, insert the thermometer into the thickest parts without touching bone. Chicken parts are irregularly shaped, so check the temperature in several pieces.
    • Clean your food thermometer after each use with hot, soapy water.

    Chicken Temperature For Dark Meat

    When working with dark meat , the temperature rules change a bit. Fattier dark meat can stand a higher temperature than lean white meat. While its safe to eat dark meat cooked to 165°, youll get a bouncier bite. Allowing thigh meat and the like to reach somewhere between 175° and 190° will give you more tender meat because the connective tissues have longer to break down. The actual level of doneness comes down a bit to personal preference. Morocco says his ultimate chicken thighs are slow-roasted or braised at a low cooking temperature in plenty of olive oil until theyre full of flavor and have a fall-apart texture.

    How To Carve A Roasted Chicken:

    • Once your chicken is cooked its time to carve it. You can either carve it at serving, or you can remove all the meat from the bones for later use.

    Lets start out by saying 500 degrees isnt a temperature wed recommend for chicken.

    Given the fact that drumsticks and thighs are dark meat and wont dry out as easily as breasts, the range from 350 to 450 degrees is okay for baking them.

    350 to 375 is generally best for breasts.

    The best answer to these questions? Simply check the chicken for doneness using an instant read thermometer. Stick it into the thickest part of the chicken, making sure you don’t touch a bone if there is one. It’ll read 165 degrees F when the chicken is done.

  • Insert the thermometer into the thickest part of the chicken.
  • Be mindful that you are not in a fat pocket or hitting a bone as this will result in a false reading
  • Once the thermometer is inserted, let it sit for about 30 seconds so it can reach the final temperature.

  • Check the temperature at the new location

  • Depending on the type of chicken you are cooking, it may be normal to have different temperatures throughout . However, for a single piece the temperature should be even.

    In addition to determining that the chicken has been thoroughly cooked, a meat thermometer also ensures you wont overcook your chicken.

    The goal of a delicious chicken is to have a moist and juicy chicken. Therefore, you wont want to overcook it. A meat thermometer helps you avoid this by letting you know exactly when it is ready to remove from the oven.
