It was time to call in the big guns. Sure, it’d be nice if I could pick up a package of wings on game day and have them ready for dipping in blue cheese a few hours later. But wishing it ain’t gonna make it happen. As I discovered yet again, good results require careful thought, a bit of work, and plenty of time.

I decided to use a method that works wonders on whole birds and red-meat roasts alike: air-drying. Hopefully allowing the wings to dry on a rack overnight would dehydrate them enough that rapid browning could happen in the oven.

I set three new batches of wings on a rack set in a baking sheet and placed them, uncovered, in the refrigerator overnight. One was tossed with baking soda , one was tossed with baking powder, and one was plain.

The next day, I removed the desiccated wings and baked them in a 425°F oven, on the same rack that I’d dried them on. The results were even better than I’d expected:

This is by far the best recipe for baked chicken wings that Ive ever tried. After many experiments I finally was able to make my baked chicken wings extra crispy on the outside and very tender and most on the inside. They taste just like deep-fried wings, only without the oily mess and added calories. Actually, they taste better than deep-fried. Try them, youll know what I am talking about.

The SECRET To Crispy Oven Baked Chicken Wings
  • Add a little oil if you wish: Apply a drizzle of oil to your chicken before tossing it with the spices. As a result, it will help the spices to stick to the meat. Also, it prevents them from burning while in the oven. If you decide to use oil, pat the wings dry with a paper towel first to reduce the moisture.
  • Flip the chicken: Flipping the wings halfway through the baking process allows them to get crispy on both sides. Otherwise, one side will be extra crispy and the other will be like normal baked chicken.
  • Tip for easy clean-up: Because the baking sheet is lined with foil and parchment paper, clean up couldnt be any easier. You probably wont even need to wash the pan itself!Place your cooling racks soak in hot soapy water, and they will clean up easily as well.
