Superior Construction & Materials
Fontana commercial pizza ovens are constructed using 2.5 millimeter 310 S Stainless Steel, 12 centimeter thick insulation, and corrosion-resistant, powder-coated metal. We also utilize solid weld construction when assembling our ovens, this yields a more durable product that will withstand high temperature applications.Many other commercial ovens use lower-grade steel, and synthetic insulation, affecting heat retention and durability. Additionally, some other manufacturers will cut costs by using spot weld construction which results in a less durable oven.

The Power To Perform Since 1990
In 1989, challenged with the task of finding a wood-fired stone hearth oven or brick oven that could withstand the intense rigors of the restaurant world, Keith Carpenter set out for perfection. Inspired to create a better wood-fired oven, Carpenter pitched some ideas to Harry Hegarty, an experienced builder of large-scale, high-temperature ceramic incinerators. Castelli Forni: Since 1966
Founded in 1966 in Rome, Italy Castelli Forni is operated and owned by brothers Elio & Emilio Castelli. The company is focused on the production and development of artisanal electric pizza ovens for the Roman pizza industry.
After forging a partnership with the Associazione Pizzerie Italiane in the late 80s, Castelli Forni began development of its ovens for baking high-hydration pizza dough. At the time, typical electric pizza ovens in Italy were designed to bake 50-60% hydration pizza dough.
