- To truss a chicken, cut about a 3-foot length of heatproof butcher’s twine.
- Lay the chicken on a clean surface with the breast facing up.

- Catch the ends of the legs inside the string, then cross the string over the chicken’s breast, making an X.

- To Reheat. Gently rewarm chicken in a baking dish in the oven at 350 degrees F.
- To Freeze. Freeze leftovers in an airtight freezer-safe storage container for up to 3 months. Let thaw overnight in the refrigerator before reheating.

- Start with a simple seasoning on both sides of the chicken breasts. The general rule of thumb is that it will take about 15 to 18 minutes of cooking time per pound of roast chicken plus an additional 15 minutes and then resting time.
