Use Yukon Gold Potatoes

Crispy Oven Baked French Fries Recipe
  • I tested baked fries with both russet and Yukon gold potatoes, and while both do work, I preferred the final texture of the baked fries made with Yukon golds.
  • While both potato varieties crisped nicely on the outsides, I found the insides of the russets to be drier, while the oven fries made with the Yukon golds were more tender and creamy.
  • You may also see Yukon gold potatoes labeled simply gold or yellow potatoes at the grocery store.
  • A potato labeled Idaho typically refers to russet.

How To Make Oven

Start with 3 regular baking potatoes and slice them in half, then cut the halves into wedges. I usually get about 4 wedges out of each half.

Cover a cookie sheet with tin foil and then place the potato wedges on the foil. Drizzle 2 tablespoons olive oil over the potatoes.

Now sprinkle paprika, cumin, garlic powder, chili powder, and Italian herbs over all the wedges. Using your hands, toss the potatoes with the oil and seasonings, making sure each potato is well coated.

Roast for 20 minutes, then turn each potato to the other side and drizzle with just a bit more olive oil. The turning of each potato is very important, otherwise you wonât get the nice crunch on the outside. Roast for another 10 minutes or until tender and remove from oven. Serve immediately.

  • ½teaspoonChipotle or regular chili powder

As deep fried french fries are often double fried Ive found the same thing works magically for oven fries! You can make oven french fries so good and crispy!

  • SOAK: Soak the potatoes in cold water after cutting for at least 30 minutes. This step removes a lot of starch resulting in a crispier French fry!
  • DRY: This is really important. Make sure you dry them well so they dont steam and get soft when they bake! I spin them in my salad spinner and then dap in a kitchen towel.
  • OIL & SEASON: Use parchment paper to keep them from sticking and oil to make them crisp! While these are a version of healthy fries, if you want them to crisp, you will still need to be generous with the oil.
  • TWO TEMP COOKING: This easy technique allows the fries to bake perfectly crispy! Simply bake at 375°F for a little bit to cook and then turn up the heat to really crisp them up!

Do I Need To Soak The Potatoes In Salt Water For French Fries

The salt water soak is essential to not overbrowning or even burning your fries while using the broil method. Soaking the potatoes in an ice bath helps remove moisture and starch from the potatoes resulting in a crispier and tastier fry. When I simply soaked the fries in normal cold water, they burned within minutes of cooking. The fries that had been soaked in salt water were much less likely to burn.

Why Wont My Fries Get Crispy In The Oven

If youre like most people, you love the crispy texture of fries cooked in an oven. Unfortunately, for many people, their fries never seem to get that crispy texture no matter how many times they try. There are a few reasons why this may happen.

The first reason is that ovens vary in their heat output and this can affect how quickly your fries cook. If your oven isnt very hot, it may take a while for it to reach the necessary temperature to start cooking your fries. Additionally, if your oven has low BTUs (British

Thermal Units), it may not be able to generate the required amount of heat to crisp up your fries.

The second reason is that some oils and fats can inhibit the formation of crispy textures in food products. These oils and fats can include things like margarine or vegetable oil.

Why Do I Need To Soak My Potatoes Before Baking In The Oven

You should soak your cut fries in some cold water for at least an hour prior to baking in order to make crispy french fries in the oven. This will remove the excess potato starch from the outside of the fries and help them crisp in the oven.

It also crisps them without causing them to burn. This might seem like an unnecessary extra step, but it makes a huge difference when baking fries at home!
