Use Yukon Gold Potatoes
- I tested baked fries with both russet and Yukon gold potatoes, and while both do work, I preferred the final texture of the baked fries made with Yukon golds.
- While both potato varieties crisped nicely on the outsides, I found the insides of the russets to be drier, while the oven fries made with the Yukon golds were more tender and creamy.
- You may also see Yukon gold potatoes labeled simply gold or yellow potatoes at the grocery store.
- A potato labeled Idaho typically refers to russet.
How To Make Oven
Start with 3 regular baking potatoes and slice them in half, then cut the halves into wedges. I usually get about 4 wedges out of each half.
Cover a cookie sheet with tin foil and then place the potato wedges on the foil. Drizzle 2 tablespoons olive oil over the potatoes.
Now sprinkle paprika, cumin, garlic powder, chili powder, and Italian herbs over all the wedges. Using your hands, toss the potatoes with the oil and seasonings, making sure each potato is well coated.
Roast for 20 minutes, then turn each potato to the other side and drizzle with just a bit more olive oil. The turning of each potato is very important, otherwise you wonât get the nice crunch on the outside. Roast for another 10 minutes or until tender and remove from oven. Serve immediately.

- SOAK: Soak the potatoes in cold water after cutting for at least 30 minutes. This step removes a lot of starch resulting in a crispier French fry!
- DRY: This is really important. Make sure you dry them well so they dont steam and get soft when they bake! I spin them in my salad spinner and then dap in a kitchen towel.
- OIL & SEASON: Use parchment paper to keep them from sticking and oil to make them crisp! While these are a version of healthy fries, if you want them to crisp, you will still need to be generous with the oil.
- TWO TEMP COOKING: This easy technique allows the fries to bake perfectly crispy! Simply bake at 375°F for a little bit to cook and then turn up the heat to really crisp them up!

Do I Need To Soak The Potatoes In Salt Water For French Fries
The salt water soak is essential to not overbrowning or even burning your fries while using the broil method. Soaking the potatoes in an ice bath helps remove moisture and starch from the potatoes resulting in a crispier and tastier fry. When I simply soaked the fries in normal cold water, they burned within minutes of cooking. The fries that had been soaked in salt water were much less likely to burn.

I know potatoes get a bad rap, but we eat a lot of them too and we are only 4! LOL! The trick to making potatoes a bit healthier is to always leave the skin on. Everything that isnât pure starch is in the skin. We make oven baked fries all the time as well, yours look yummy! What we do sometimes is mix it up : Iâll julienne carrots, parsnips, rutabagas and make mixed root veggie fries. My daughter loves them!
