  • Prepare Grill:Preheat an outdoor grill to medium-high about 425F to 450F. Once preheated, brush the grill grates with oil.
  • Cook Chicken:Grill chicken for 5 to 8 minutes per side, or until internal temperature reaches 165F. Use an Instant Read Thermometer to check for doneness. Keep in mind, thicker chicken breasts will need more time to cook.

    How To Make Parmesan Crusted Chicken

    Its honestly as simple as this:

    • cut chicken breasts in half

    • dunk in garlicky egg

    • press on parmesan and

    • pan fry to golden crispy perfection.

    Doesnt that parmesan crust look incredible?? That colour aint from Photoshopping, thats the colour it actually is. For the cynics out there see? Evidence. Havent touched the saturation slider!!

    This is a super quick dinner. If this is in your pan for longer than 6 minutes, youve overcooked the chicken. Speed is imperative here. High heat and speed!

    In keeping with the low-carb theme of this recipe, I opted to go for a cauliflower mash rather than my usual potato. And fancied it up with the tiniest drizzle of browned butter just 1/2 tsp drizzled over the mash makes a world of difference because its so fragrant and has such an intense, rich flavour. Honestly, if you arent a fan of cauliflower mash, try it with browned butter and I bet you scoff it down like crazy!

    Alright, so heres the secret! To make perfectly baked chicken bbrrreasts, you simply need to follow this 5-step acronym: B.B.R.R.R.

    Brine : Im telling you this step is an absolute must for anytime you want to bake chicken breasts in the oven. Brining chicken is super-easy, it makes your chicken extra juicy, and best of all, it can be effectively done in just 15 minutes. Plus, if you brine chicken in lukewarm water, it also helps bring the chicken to room temperature, which makes for more even cooking. Win-win!

    To brine chicken, simply fill a big bowl with lukewarm water. Stir in a handful of salt until it mostly dissolves. Then add your chicken breasts and let them sit in the saltwater to brine for at least 15 minutes. If you are doing this in advance, you can cover and refrigerate the bowl of chicken and saltwater for up to 6 hours. But you dont want to let the chicken brine for much longer than that.

    When youre ready to go, remove the chicken from the brine. Give it a good rinse it with cold water to wash off the salt, and then pat it dry with some paper towels. And voila your chicken is officially brined.

    Really, dont skip over this step! It makes a world of difference.

    Note: That said, some store-bought chicken breasts are now sold pre-brined. So double-check your packaging beforehand. And if your chicken has already been pre-brined in a sodium solution, just move onto step two. ï

    Tips For The Best Chicken Breasts

    • Let Chicken Rest: After you remove your chicken from the heat, its important to let it rest for 8 to 10 minutes. The chicken will absorb even more flavor and retain all that juice while it cools!
    • Fully Soak in Marinade: Make sure you let your chicken soak in the balsamic marinade for at least an hour before you cook it. The longer it soaks, up to 12 hours, the better your chicken will taste and the juicier itll get.
    • Check Internal Temperature: You want the internal temperature of your chicken to reach 165°F. Check the temperature with an instant read meat thermometer while chicken is on the grill or after 20 minutes of baking. If your chicken breasts are thicker, theyll take longer to cook.

  • Prepare marinade. Combine all ingredients in a large mixing bowl and whisk together. Cheater method: put them straight into a large ziploc bag that will also be used for marinating the chicken.

    How To Broil Chicken Breasts

    Because broilers can vary, make sure to keep a close eye while broiling to avoid burning and overcooking. If opting for bone-in chicken breasts with the skin on, poke the skin with a fork or create a few slits with a paring knife and start broiling skin side down. This will help the fat render into the drip pan. Remember that bone-in breasts take a bit longer to cook, add five minutes to the cooking time before checking the temperature. Broiling, although effortless and quick, might not yield the juiciest chicken, so be sure to brush with oil before broiling, use your favorite marinade, or/and pair with a creamy sauce for serving.

  • Preheat broiler with one oven rack in the middle position. If broiling skin-on chicken, position another rack 6 inches from the heat source. Line a drip pan with aluminum foil and set the broiler pan on top. Coat the pan with vegetable oil.
  • Lightly brush chicken breasts with olive oil and season with salt and pepper on both sides.
  • Broil on middle rack, turning halfway through, until chicken is golden in spots and an instant-read thermometer inserted in the thickest portion of breast registers 165 degrees, 12 to 18 minutes depending on thickness.     For the indirect cooking part of this recipe, you are aiming for 150-155 degrees in the thickest part of the breast.

    How To Cook Chicken Breast In The Oven

    There are two ways to cook your breasts in the oven: bake or broil. I am partial to the broil because I think it creates great browning and retains moisture, but if youre not comfortable with that, you can also bake. For both methods, youll want to put the breasts on a foil-lined sheet pan first.

    To bake: Preheat your oven to 400 F. Put the breasts in the oven and cook for 30 to 40 minutes. To maintain extra moisture, I like to tent the foil halfway through to keep the breasts covered. Start checking the temperature after 25 to 30 minutes the biggest mistake is overcooking, so check each breast since they are different sizes. Once youve reached 150 to 155 F, pull them out and let them rest.

    To broil: Make sure a rack is close to the top, about 4 to 6 inches away from the heat source. Turn on the broiler . Put the breasts in the oven and cook for 3 to 4 minutes, then turn over and cook for another 3 to 4 minutes.

  • Pound boneless, skinless chicken breasts between two layers of plastic wrap to an even thickness of about ½-inch.
  • Beat 2 large eggs with a pinch of salt and several grinds of pepper in a shallow dish. Stir about 2½ cups panko, a generous pinch of salt, and several grinds of pepper in a separate dish. Dip one chicken breast at a time in egg mixture and turn to coat. Let excess drip off. Dredge chicken in panko, pressing gently to coat.
