I follow a simple rule of thumb while baking chicken breast. It’s called the high heat low time method. I have been following this method since childhood. My mother used to say that if you have a chicken breast about 1/2 inch to 3/4 inch thick, then it’s the best. She would always use a meat mallet to beat out the thick part. She said it helps the chicken cook thoroughly and distributes the juices evenly.

She would always say – “Bake it at a high temperature for just 20 minutes and make sure you check its doneness at the 20-minute mark before cooking it further.” She would open the oven door and check the doneness of the chicken after every minute once it hit the 20-minute mark. She would always caution me when it reached the 22 or 23-minute mark. She said that’s when you should be extra careful. The chicken tends to get dry, chewy and tastes completely inedible – just like leather.

What If I Dont Have A Cast Iron

    • Cajun seasoning

    Wet Vs Dry Brined Chicken Breasts

    • Pros. Short brining time. Just 15 minutes yielded fantastic results. Chicken retained more moisture.
    • Cons. Messy. I dont love having my chicken sitting in a bowl of water. Wet brining takes up more space. You need to rinse the chicken after it is brined which is messy and has a slightly higher contamination risk .
    • RESULT. Some of the juiciest chicken Ive ever tasted. It was plumper than the dry brine, though I cant say one was more tender than the other.
  • Pros. Neater and easier compared to the wet brine method. You do not need to rinse the meat after dry brining simply brush off the excess salt.
  • Cons. Longer brining time compared to wet . Slightly less juicy chicken compared to wet.
  • RESULT. The chicken was firmer and less plump than the wet brined chicken, but not in a bad way. It was still incredibly tender and much, much better than chicken breasts that are not brined.
