How To Keep Baked Chicken Breast Moist And Juicy
I follow a simple rule of thumb while baking chicken breast. It’s called the high heat low time method. I have been following this method since childhood. My mother used to say that if you have a chicken breast about 1/2 inch to 3/4 inch thick, then it’s the best. She would always use a meat mallet to beat out the thick part. She said it helps the chicken cook thoroughly and distributes the juices evenly.
She would always say – “Bake it at a high temperature for just 20 minutes and make sure you check its doneness at the 20-minute mark before cooking it further.” She would open the oven door and check the doneness of the chicken after every minute once it hit the 20-minute mark. She would always caution me when it reached the 22 or 23-minute mark. She said that’s when you should be extra careful. The chicken tends to get dry, chewy and tastes completely inedible – just like leather.
What If I Dont Have A Cast Iron
If you dont have a cast iron pan, no need to worry. You can use a regular skillet to sear your chicken and when youre ready to cook the breasts, you can transfer them to a foil sheet pan, casserole or an oven-safe baking dish before adding the garlic butter.
Tip: if you bake your chicken breast in a sheet pan or casserole, add some potatoes, cauliflower and broccoli to make it a one-pan meal.

Preheat the oven to 425 degrees Fahrenheit for the finest skin. I believe that the relevance of roasting chicken in a hot oven is underappreciated by the majority of people. Insufficient heat in the oven can cause the chicken to overcook before it has a chance to brown properly. After approximately an hour at 425°F, the chicken is well browned while yet being moist.

How To Cook Chicken Breast In The Oven
Chicken is one of the most versatile proteins. It works well on salads, in pastas and as a main dish. While one of the easiest and tasiest ways to cook chicken breast is in the oven, it’s a technique that can often overcook and dry out the meat. To guarantee you get a moist, tender chicken every time, follow these helpful tips and tricks that will make you a master of oven-baked chicken in no time.
The key to making chicken breast in the oven is to prepare it properly. Start by pounding the meat flat. Because chicken breast is often uneven, with one side being thicker than the other, the time it takes to fully cook the thickest part of the chicken can leave the thinner sections dried out. To avoid this, use a meat pounder or rolling pin to even out the thicker sides of the chicken. It doesn’t need to be super thin, just somewhat even.
Next up is seasoning. Generously coat the chicken breast with olive oil, then add your rub. Paprika, garlic powder, salt and pepper will give your chicken a ton of flavor and the paprika gives it a subtle kick. Once the chicken is seasoned evenly on both sides cook it in the oven for about 20 minutes, or until its internal temperature reaches 160F.
The chicken should have a nice crisp exterior from the seasoning and a perfectly juicy center. This quick and easy way to prepare the protein can be used in many different chicken recipes for busy weeknights.
Types Of Chicken Breast
Chicken breast fillets have no bone and can be bought with or without skin. Keep the skin on for more flavour if you like. Fillets sometimes come with a smaller mini or false fillet attached. If you’re making a chicken Kiev then sometimes the recipe will require this extra piece to help hold the filling in. You can also buy packs of mini fillets, which cook very quickly and are ideal for stir-fries.
Chicken supremes, often called for in restaurant-style recipes, have a small wing bone still attached.

How To Season Chicken Breasts
Chicken breasts are mildly flavored so youll want to add seasonings and some salt. Most of the time I dont brine or use a chicken marinade as Im most often looking for a quick meal but of course, you can do either. If cooked and seasoned well, theyre tender and juicy on their own.
Really anything goes but here are some of my favorite seasonings for chicken breasts:
- Italian seasoning, salt and paprika
- Cajun seasoning
Wet Vs Dry Brined Chicken Breasts
- Pros. Short brining time. Just 15 minutes yielded fantastic results. Chicken retained more moisture.
- Cons. Messy. I dont love having my chicken sitting in a bowl of water. Wet brining takes up more space. You need to rinse the chicken after it is brined which is messy and has a slightly higher contamination risk .
- RESULT. Some of the juiciest chicken Ive ever tasted. It was plumper than the dry brine, though I cant say one was more tender than the other.
