How To Cook Chicken Thighs On Stove
I have two methods and sauces for this chicken thigh recipe. If you want to only use your stovetop with a lid it takes about the same cook time as if you transitioned it to the oven. The biggest difference is going to be the texture. If you really want crispy skin then youll want to move it. With a lid it will get super super tender but the outside wont be as crisp.
This starts with sautéing a bunch of onions. Those give it a great flavor with very little money. It also adds a bit of texture to the overall dish when served. Another nice plus is that when the meat is set on top it elevates them a bit so the drippings will stay off of the outsides.
If you dont use the sauce explained below you could drain those juices at the end and make chicken drippings gravy out of it quite easily. No need to waste.

Why Bake Chicken Thighs At 400 Fahrenheit
Baking chicken thighs at 400 degrees Fahrenheit will ensure that they are cooked through while also keeping them juicy and moist. This is the ideal temperature for baking chicken thighs, as cooking them at a higher temperature will make them dry out.
If you want to get a crispy skin on your chicken thighs, you can cook them at a higher temperature for the first few minutes before lowering the temperature to 400 degrees Fahrenheit, or you can sear them in a pan before placing them in the oven. However, this isnt necessary and you can achieve perfectly baked chicken thighs without ever adjusting the temperature.
How Do You Know When Chicken Thighs Are Cooked

To test when chicken thighs are cooked we recommend using a meat thermometer. Using a digital thermometer will help you to become a more confident cook and remove any stress of potential food poisoning.
Chicken is cooked when it has an internal temperature of 74C. To probe your chicken thighs you should insert the thermometer into the thickest part of the meat.
You can also test to see the chicken is cooked if the juices run clear when cut and pressed. However, this method isnt as precise and can also ruin the presentation if youre serving chicken thighs at a dinner party. How To Make Chicken Thighs With Crispy Skin
This could be the best way to make chicken thighs ever! The skin gets insanely crispy and the meat juicy as can be. This method for coking chicken thighs involves a cast iron pan, the stove-top, and the oven. Here are the steps for making the chicken thighs.
Allow the chicken thighs to sit at room temperature for 20 minutes. Cold meat in a hot oven or hot pan will cook unevenly and be tough. Make sure to pat the skin dry with paper towels, moisture will prevent the skin from getting crispy.
- Season the chicken all over with salt and a good amount of smoked paprika and cayenne pepper only on the skin side. Rub the spices into the skin with your hands.
- Preheat a large cast iron pan over medium-high heat for 2 minutes with 2 tablespoons of oil. Once hot, add the chicken thighs skin side down and allow them to cook for 8 minutes undisturbed. No need to move the chicken around, just let them do their thing and get nice and crusty. Move the pan to the oven and let them continue to cook skin side down for 9 minutes. Flip and cook another 3 minutes.
- Once the chicken is out of the oven, move to a clean plate and allow it to rest for 5 minutes. If you cut into the chicken thighs now, the juices will spill out and the meat will get dry.

Chicken Thighs On Stovetop
I will say that if the two were the same price I would buy boneless just because it will soak up the sauce more and is way easier to cut and serve when its done. Reason I dont is the price, with the bone in obviously is cheaper overall. The timing does vary a lot between the two since it has to heat thru the bone with the one.

If you needed a dairy free version of this I have found vegan plant based butter products at the store that are pretty good. Youd have to use coconut milk as the dairy which will be sweeter and not quite as thick but would work nonetheless.

- 2 teaspoons baking powder You can not substitute baking soda for baking powder, it must be baking powder for crispy skin.
- 1 teaspoon paprika Using smoked paprika can also give these chicken thighs even more flavor, but regular paprika works just fine also.
- 1 teaspoon garlic powder or granulated garlic. Fresh garlic can be used if it is minced well, use at least two cloves of garlic.

Chicken thighs can be cooked as they are, straight from the package. However, some people prefer to buy the least expensive cut-bone-in, skin-on chicken thighs and break them down a bit more to save money and get a faster-cooking protein option.
To remove the bone: With the skin-side down, cut along the bone, piercing the meat with your knife. Pull the bone up and away from the meat, and carefully run your knife between the bone and meat. Use your knife to scrape along the end of the bone and free it from the rest of the meat.
