How To Make Chicken Souvlaki
Im guessing most of you are familiar with this Greek classic. But did you know that its actually super easy to make at home?! All you need are a few minutes of prep time, a few simple ingredients, and a hot grill or a hot oven. And opa! this recipe can be ready to enjoy in no time.
Simply marinate some chicken breasts in lemon juice, olive oil, garlic, oregano, salt and pepper.
Then once they have marinated for at least 30 minutes , cook them in the oven or on the grill until theyre just done, and still nice and juicy.
Then, while the chicken is cooking, grab some pita bread , and load it up with all of your favorite pita toppings! I went with fresh arugula, cherry tomatoes, red onion, feta cheese, tzatziki sauce, and parsley. But any number of toppings would also be delicious!
Finally, add your chicken on top
and this gorgeous, fresh, and flavorful pita sandwich will be yours to enjoy.
And hey pro tip it tastes delicious even when the chicken is chilled. So be sure to cook a little extra, and then you can enjoy your souvlaki as leftovers for days to come either on pita, or in a fresh salad, or in a rice bowl you name it.

- Make it a sheet pan meal.This isnt required, but makes dinner that much easier! To turn this spatchcock chicken recipe into a sheet pan meal, chop your favorite vegetables while the chicken is in the oven and toss them in olive oil, salt and pepper.When there is about 25 minutes left for the chicken , very quickly take it out, arrange the vegetables around the chicken, and place back in the oven to finish roasting.
- Let it rest. While its awfully tempting to dig into the chicken the minute it comes out of the oven, but waiting 10-15 minutes will ensure your chicken stays nice and juicy.

Brine : Im telling you this step is an absolute must for anytime you want to bake chicken breasts in the oven. Brining chicken is super-easy, it makes your chicken extra juicy, and best of all, it can be effectively done in just 15 minutes. Plus, if you brine chicken in lukewarm water, it also helps bring the chicken to room temperature, which makes for more even cooking. Win-win!
To brine chicken, simply fill a big bowl with lukewarm water. Stir in a handful of salt until it mostly dissolves. Then add your chicken breasts and let them sit in the saltwater to brine for at least 15 minutes. If you are doing this in advance, you can cover and refrigerate the bowl of chicken and saltwater for up to 6 hours. But you dont want to let the chicken brine for much longer than that.
When youre ready to go, remove the chicken from the brine. Give it a good rinse it with cold water to wash off the salt, and then pat it dry with some paper towels. And voila your chicken is officially brined.
Really, dont skip over this step! It makes a world of difference.
Note: That said, some store-bought chicken breasts are now sold pre-brined. So double-check your packaging beforehand. And if your chicken has already been pre-brined in a sodium solution, just move onto step two. 🙂
