How To Prepare Chicken Legs For Baking
Your prep for oven roasted chicken legs is centered around encouraging air circulation to get them crispy.
- Prep the oven and pan. Preheat the oven. Line a baking sheet with foil and place an oven safe rack over the sheet pan. I prefer foil rather than parchment paper for lining underneath the rack, because it catches the juices more easily.
TIP:The oven rack helps circulate the hot air around chicken, for the best baked chicken drumsticks that are nice and crispy!
- Dry the chicken. Pat the drumsticks with a paper towel, which will help get rid of any extra moisture and get them nice and crispy.

How To Make Bbq Chicken In The Oven
Taking cues from the grilled version of this recipe, the chicken gets a quick sear under the broiler to brown the skin, and then a longer roast in the oven until the chicken is completely tender.
A quick marinade in the barbecue sauce before roasting helps enhance the flavor and improve the tenderness of the chicken. The barbecue sauce bakes into the skin and caramelizes during cooking.

Recipe Notes And Tips
- The longer you can marinate, the better. At least 2 hours is best or up to 24 hours.
- Discard any leftover marinade do not brush onto cooked chicken or re-use.
- Use nonstick foil or spray the foil with cooking spray. Dont be afraid to spray it even if you are using nonstick foil.
- As much as I love chicken skin, I prefer to remove the skin from the chicken legs for this recipe. If using chicken thighs, you can decide whether to leave it on or remove it or use boneless chicken thighs.
- Bonus tip: When you bring chicken home from the store, prep marinades and place the meat and marinade together in freezer bags. Keep in the freezer up to 3 months, and pull out to thaw in the fridge overnight. As the meat is thawing, it will be soaking up the flavors of the marinade!

If the juices are at all pink, the chicken is not done, and needs to be cooked longer. Check frequently during the last few minutes of baking to ensure you do not overcook the chicken which will make it dry.

I really like having pre-cooked chicken in the fridge that I can use to quickly whip up a sandwich or wrap, or add protein to a bowl of pasta, salad, or one of my leftovers bowls. While I often use a rotisserie chicken for this purpose, they are sometimes just too salty and we have a hard time going through a whole chicken between the two of us. So, this week I experimented a bit more with the low and slow roasting method and made these incredibly tender and juicy Herb Roasted Chicken Breasts.
