As a guide, allow around 400g of whole fish weight per person. A whole fish yields on average 40 50% of flesh, depending on the species . This equates to 160 200g fish meat per person assuming a 40 50% flesh yield based on the weight of a whole fish.

So, calculating conservatively, for an 800g whole fish say, this yields 800g x 40% = 320g fish meat, minimum. Between two people this is at least 160g each good sized portions.

    How to Cook Fish – Oven Baked Easy Lemon Butter Garlic – Sea Bass

    Thanks to your new friend at the fresh fish market counter, who will take care of cleaning and scaling the fish for you, the actual prep time for your roasted fish should be super quick and easy. Simply:

  • Rinse and pat the fish dry. I recommend giving the fish one more good rinse when you get it home. Then lightly pat it dry with a paper towel, and transfer it to a foil-lined baking sheet.
  • Score the fish. If the fish counter did not already do this for you, use a knife to cut slits about an inch apart across the top of the fish. They do not need to be super-deep just enough to cut through the skin.
  • Brush the fish thoroughly with oil, inside and out. Using an oil with a high smoke point, generously brush the outside of the fish with oil on both sides, being sure to also get the oil inside the slits you just cut. Then briefly brush some oil on the inner cavity of the fish.
  • Stuff the cavity with your aromatics. In this recipe, I recommend fresh herbs, lemon slices and garlic. But please experiment with whatever seasonings you love! Also, one note on the garlic be sure to stuff it all the way into the cavity of the fish, or it may burn if it is left exposed.
  • Season the heck outta the fish. I recommend adding lots of sea salt, freshly-cracked black pepper, and garlic powder to the outside of the fish. Plus a bit on the inside cavity as well.
  • Then thats it! Your fresh fish is officially ready to go.

    Making Breaded Fish From Frozen

    I lightly oiled cod portions and put them on a heavy-duty baking sheet that can withstand a high temperature then baked at 450°F until nearly cooked through .

    Meanwhile, I also baked some lightly seasoned, lightly oiled Panko crumbs until a toasty browned .

    I then removed the fish from the oven and brushed the tops of the fillets lightly with a mixture of half dijon mustard and half milk, and then sprinkled the fillets with the toasted breadcrumbs.

    The cod then went back into the oven until the fish registered 145F on an instant-read thermometer and was flaky in the middle.

    How To Make Baked Fish With Tomatoes Step By Step Photos

    Preheat the oven to 400ºF. Drain most of the liquid from a 15oz. can of fire roasted diced tomatoes. Combine the tomatoes in a bowl with 2 minced cloves of garlic, 2 Tbsp olive oil, 1/2 tsp dried oregano, 1/4 tsp salt, some freshly cracked pepper , and 1/2 Tbsp lemon juice. Stir until well combined.

    Spread about 1/3 of the tomato mixture in the bottom of a baking dish that is big enough to fit your fish fillets in a single layer without overlapping.

    This recipe is great with any type of mild white fish. Think cod, halibut, tilapia, pollock, or grouper . I feel like fish with stronger flavors, like salmon, would probably compete too much with the flavors in the dish.

    I used Cod fillets for my Baked Fish with Tomatoes. The cod fillets were twice as expensive as the tilapia, but Ive heard some horror stories about tilapia farming, so I opted for the line-caught MSC certified cod fillets instead. Sustainability labeling on seafood can be confusing, IMHO, but I feel better know that Im at least trying!
