How To Cook Steak In The Oven Properly
For best results when baking steak in an oven, you want to place the meat on a wire rack.
You can line your baking sheet with aluminum foil for easy cleanup, but keep in mind that cooking on aluminum isnt great for you.
If you want to cook your steak in an oven without any of these problems, then use a cooking pan that is designed for oven use!
The wire rack will allow all of the heat to be distributed evenly through your steak so its cooked thoroughly.
You should cook your oven-baked steak at a temperature anywhere between 350-450 degrees Fahrenheit. This is about 175 degrees celsius, which is roughly medium-rare.
When youre cooking steak in an oven, if you want to see how its coming along you should use a meat thermometer.
Once your steak is cooked to the perfect temperature, take it out of the oven and allow it to sit for 10 minutes before serving.
This will let all of the juices redistribute properly throughout your steak so that you dont lose any.
If needed, place the steak under low heat for a few minutes just to keep it warm.
You should also note that thin, tender cuts of steak tend to do better in the oven than thicker cuts like T-bones or porterhouses.
Thicker cuts of meat are usually cooked on the grill because there is more room for charring and overcooking with an oven.
Now that weve covered some tips for cooking steak in the oven, theres only one thing left to do: go and try it out!

Prep And Season The Steak
Remove the steak from the fridge 1 hour prior to cooking to bring it closer to room temp. This is going to ensure even cooking and more accurate cook times. Pat the steaks dry with a paper towel and place on a wire rack set in a rimmed baking sheet and season generously with coarse sea salt or kosher salt and pepper.
Its important to keep the steak elevated off the pan so it cooks uniformly and has room to breathe. Otherwise, the hot pan will transfer more heat to the bottom of the skillet. The wire rack will also help to dry out the entire exterior of the steak.

Reverse Sear Steak The Professional Way
- Preheat oven to 275°F. Place steaks on a wire rack over a baking sheet.
- Place baking sheet on the center rack of the hot oven. Cook until internal temperature reaches 10°F lower than the desired final temperature, according to the times listed in the chart below.
- Remove and let steaks rest for 5 minutes, covering lightly with foil.
- Preheat a heavy skillet or cast-iron skillet over high heat until very hot, about 5 minutes. A hot skillet delivers the best sear.
- Add some butter or oil and sear steaks for one minute each side. The final internal temperature of your steak should match the temperature of your desired level of doneness, as listed in this cooking times chart.
- Serve immediately. Unlike other methods of cooking steak, the low heat of the oven used in reverse searing does not draw the juices of the meat to the surface so additional resting time is not needed.

Bring To Room Temperature
If you take your steak straight from the fridge to the pan, you may end up with a less than ideal meal at the end of your cook. Give your steak 30 to 60 minutes on the counter, and the end result will be much tastier.
When the meat has heated to room temperature, once it hits the overn, it’ll heat up much more quickly and evenly, both internally and externally. If you take it straight from the fridge to the hot oven, the outside will cook much faster than the inside and you’ll likely end up with an overcooked exterior and an undercooked interior.

Internal Temperature For Steak
The doneness of your steak is best checked for with a food thermometer – its really difficult to gauge it correctly in any other way, especially if youre not experienced with cooking steak.
I definitely do not trust myself to cook meat correctly without a food thermometer, I use it for absolutely everything, including cake it takes the guesswork out of cooking and baking! Get one! ASAP!
Here are the internal temperature recommendations for different levels of doneness:
- Medium Rare: 130°F
- Medium well: 150°F
- Well done: 160°F
The USDA recommends an internal temperature of at least 145°F for beef, for safe consumption, followed by a 3 minute rest. See full chart. I always choose medium-rare to medium when I eat steak, my husband eats steak rare to medium-rare. I do cook it to 145°F for our children. But its your personal choice to do whats right for you and your family.
That being said, steak does cook quickly this way. The skillet is HOT and transfers a lot of heat to the steak. I choose a blazing hot sear and then a medium-high oven temperature because the steak basically just needs the heat to go through it at this point. My steak was thick and reached 130°F after just 5 minutes in the oven.

What Is Cowboy Steak
Cowboy steak is a cut of beef that is usually cooked over an open flame, which is then served dry. There are two types of cowboy steak: flat iron and rib eye. The flat iron has a long and narrow shape that makes it a lot easier to cook on a grill. The rib eye is generally thicker than the flat iron. The texture is a little harder to cook, but its not as thick, so you can get a better sear on the surface. Another benefit of cooking a steak over an open flame is that it gets a nice crust.

Dry Baking Tender Prime Steaks
Tender cuts of prime steak such as T-bone, tenderloin, porterhouse, New York strip, Kansas City strip, sirloin and rib eye have little connective tissue and collagen, so they’re best cooked for short periods of time using dry methods. What Steak To Choose
There are many, many cuts of steaks out there but when it comes to a simple cooked steak in the oven or on the grill, go with prime cuts. These steaks are beautiful on their own and dont require any excessive seasoning or sauces. Simply cook the steak and serve it with your favorite side.
Ribeye steak juicy and tender steak that is sliced from from the primal rib section. This cut of steak has a great amount of marbling throughout, which makes it tender, juicy, and flavorful. For best tasting steak, you are looking for a lot of fine marbling of fat throughout the slice as opposed to thick fat lines concentrated in certain areas.
Rib steak is also called bone-in ribeye. It is the same as ribeye but with the rib bone still attached.
Top Sirloin also known as sirloin, this cut comes from the primal loin section located in the upper middle part of the cow. Its a flavorful and juicy cut of beef that is as good cooked whole or cut into pieces and cooked as a kebab. This cut of steak is leaner than a ribeye cut and therefore, not quite as tender when cooked. Top sirloin is also much more tender than bottom sirloin so dont mistake the two.
Filet Mignon also known as a tenderloin steak. A true Filet Mignon comes from the smaller, narrower end of the tenderloin. This is the leanest and yet, the most tender piece of steak. And for that reason, its usually the more expensive one.
