    Basic Baked Wings Dry Rub

2 tablespoons mix for 1 pound chicken wings

    • 3 tbsp dark brown sugar
    • 3 tbsp smoked paprika, can substitute regular paprika
    • 3 tbsp coarse salt
    • 2 tbsp onion powder
    • 1 tbsp ground black pepper

Adding baking powder raises the pH of the wings and thus gives it that beautiful extra browning. This is perfect for a variety of dry rub flavors. It creates a crunchier skin and a juicier, more tender meat.

Adding both baking powder and flour, the crunchier texture and brown color from the baking powder, the added flour creates a thin coating that is ideal for grabbing on sauces! So this variation is perfect for when you want to make baked buffalo wings, for example. If youre not a fan of battered wings, you may like these better than deep-fried wings.

Take a look at how these three dry rub mixes work.

You should keep a jar of the basic rub at home at all times it is a life-saver!

    Tips For The Best Results

Dry the skin well Water and moisture are the enemies of crispy, so you will need to make sure to dry the chicken skin thoroughly so they can get supremely crispy.

Flip once during cooking Its a little more work to flip the pieces over during cooking, but it really is essential. They wont get as crispy all over unless you flip them over and give the other side a chance to brown.

Buy party cut pieces Its true that you can sometimes save a tiny bit of money by cutting the whole wings yourself into wingettes and drumettes , but pre-cut pieces tend to be more consistent. This consistency in size is essential for even cooking and browning. If you have some larger pieces and some smaller, youll have a mix of over and underdone chicken.

    Why Use Baking Powder

Were you surprised by the baking powder in that video? Unusual right? Stick with me as I go into the details.

Baking powder, not to be mistaken with baking soda, is a leavening agent usually used in baked goods such as cookies and cakes. Its a mixture of sodium bicarbonate, cream of tartar and cornstarch. When mixed with salt and coated on chicken it dries out the skin, leaving it crisp and crunchy. Why does this happen? Get ready, science-y stuff ahead! It happens because the addition of the baking powder raises the pH level in the chicken, allowing the peptide bonds in the skin to break down, thus letting the skin get more crisp and brown.

Note that while most of the comments below this post are very positive a couple of commenters noted a bitter taste on their wings. I at first thought that they were using baking soda instead of baking powder. Doing so would definitely lead to a terrible taste. However, they claimed that they were really using baking powder for sure. I was stymied until another helpful commenter posted this link showing that some people are sensitive to a flavor that is found in some brands of baking powder.

O.K., enough chatter. Lets get cooking!

    If You Like Them Grilled

Grilling wings sounds like a no-brainer, but using your grill to smoke wings is something we should all be doing in 2022! Although recipe developer Amanda Neal typically resorts to the oven or deep fryer when shes making chicken wings at home, smoking wings are by far her favorite way to prepare them. If you have an outdoor grill or received a smoker as a gift this past holiday season, smoked wings are a great and easy project to take on, says Amanda. The key to this process, she explains, is to start at a low temperature and cook for a long period of time. Because the grill is naturally prone to high temperatures, you have to carefully adjust and monitor the heat so it remains low. Just place the wings on indirect heat and let the smoke do its magic! This way the chicken becomes fall-off-the-bone tender while staying super moist and juicy. And, if you want to crisp up the skin to your liking, you can always transfer the wings to the broiler for a couple of minutes.

    Tips For Fried Chicken Wings

    • The double dip coating in this recipe ensures a thick flavorful coating. However, if you like a lighter, thinner coating, you can simply dip the chicken once into the eggs, then once into the flour.
    • Make sure you use an oil for frying with a high smoke point. I recommend vegetable oil, peanut oil or canola oil.
    • Use a candy thermometer or frying thermometer and adjust your burner to keep the oil as close to 350 degrees F as possible. The temperature will naturally drop when adding chicken to the pot, so be sure to keep an eye on things!
    • You can keep your wings warm in a 250 degree F oven until youre ready to eat.

    Give The Wings A Rest

It was time to call in the big guns. Sure, it’d be nice if I could pick up a package of wings on game day and have them ready for dipping in blue cheese a few hours later. But wishing it ain’t gonna make it happen. As I discovered yet again, good results require careful thought, a bit of work, and plenty of time.

I decided to use a method that works wonders on whole birds and red-meat roasts alike: air-drying. Hopefully allowing the wings to dry on a rack overnight would dehydrate them enough that rapid browning could happen in the oven.

I set three new batches of wings on a rack set in a baking sheet and placed them, uncovered, in the refrigerator overnight. One was tossed with baking soda , one was tossed with baking powder, and one was plain.

The next day, I removed the desiccated wings and baked them in a 425°F oven, on the same rack that I’d dried them on. The results were even better than I’d expected:
