Making Gravy From A Whole Chicken
If you bought a whole chicken to start with, the chicken may have come with the neck and gizzards . Use the chicken back and these giblets to make stock for gravy.
Chop up the back a little, and put the back, gizzard, and neck into a small saucepan and cover with water by a half inch or so. Bring to a simmer and let simmer while your chicken is baking. Then strain and use the stock for making a richly flavored gravy.
Heat the drippings from the roasted chicken with some stock or white wine for a simple gravy.
What Youll Need To Make This
- Chicken breasts I use boneless skinless chicken breasts. Again, I prefer organic chicken breasts. It is important to use a high quality meat as some chicken breasts are injected with a solution of saltwater to plump it up so it looks better on the shelves.
- Kosher salt and freshly ground black pepper Keep in mind that kosher salt is twice the size of table salt. A sprinkle of table salt is much saltier than the same amount in kosher salt.
- Paprika Use sweet or smoked paprika.
- Butter use Ghee if youre doing Whole30.
- Italian seasoning
- Garlic minced
- Olive oil extra virgin
Some people like to season their chicken breast with spices and some brown sugar. but because I want to keep it low-carb, I didnt add brown sugar. However, if you prefer, add one teaspoon of brown sugar to the spice mixture and season your chicken.
Tips To Make The Best Baked Chicken Breast:

And the best part, you can order online and theyll delivery straight to your door in any part of US. Its super convenient and youll receive the best quality meat box you can possible wish for
- After removing the chicken from the fridge, pat dry the chicken with paper towels.
- Replace chicken breast for chicken thighs if its what you have. I prefer to make this recipe with boneless skinless chicken breasts. However, you can make it with bone-in and skin on chicken thighs too.
- If you want a more buttery sauce, add two extra tablespoons of butter.
- If you like spices, add more paprika and Italian seasoning. You can use also cumin, coriander, garlic powder, chili powder, oregano and any other seasoning of your preference. Also, dont forget the salt and pepper. Add all the spices in a small bowl, mix well and then season your chicken breasts.
- Make sure to not burn the garlic because it will change the taste of the entire dish.
- Let the baked chicken rest for 5 minutes before serving.
- You can use a baking dish or a baking sheet.

Prepare The Chicken Breast
You actually can marinate even when its frozen. A lot of people think that the frozenness of the chicken breasts means liquids wont penetrate the meat. But thats not necessarily true.
As soon as the chicken leaves the freezer, the thawing process begins. And the meat begins to soak up the liquids from a marinate and the seasoning properties of any dry rub. So, its important to prepare and season the frozen chicken breast, the same way you would if it were fresh. Make sure to marinate while it thaws in a refrigerator, keeping the defrosting chicken in a covered container or in a sealable bag.

How To Cook Baked Chicken Breast
If youre looking to cook chicken breasts, there are a few things you need to keep in mind. First, make sure that the bird is thoroughly cooked through- this means that the skin will be crispy and the flesh will be relatively tender.
Second, dont skimp on the breading- this is essential to giving your chicken breasts their unique flavor and look. Finally, make sure to ensure that your oven gets plenty of ventilation- this will help ensure that the chicken is cooked evenly throughout.
Cooking Time And Temperature
I bake the chicken breasts in a preheated 450 degree oven until they are done, about 20 to 25 minutes. For the batch pictured here, the chicken breasts were very large. They ranged in size from 9 to nearly 11 ounces! So mine took the whole 25 minutes.
If you are using smaller chicken breasts, cook them for a shorter time. I will be testing these more in the future. So I will circle back and add suggested cooking times by weight in the recipe notes very soon!
You can always use a meat thermometer to be sure. The official temperature for the inner portion should be at least 165 degrees Fahrenheit. But, be aware that the internal temperature will rise a little during the resting phase. So if it is at 160 degrees, Id suggest going ahead and taking it out of the oven.
