If you bought a whole chicken to start with, the chicken may have come with the neck and gizzards . Use the chicken back and these giblets to make stock for gravy.

Chop up the back a little, and put the back, gizzard, and neck into a small saucepan and cover with water by a half inch or so. Bring to a simmer and let simmer while your chicken is baking. Then strain and use the stock for making a richly flavored gravy.

Heat the drippings from the roasted chicken with some stock or white wine for a simple gravy.

What Youll Need To Make This

  • Chicken breasts I use boneless skinless chicken breasts. Again, I prefer organic chicken breasts. It is important to use a high quality meat as some chicken breasts are injected with a solution of saltwater to plump it up so it looks better on the shelves.

Some people like to season their chicken breast with spices and some brown sugar. but because I want to keep it low-carb, I didnt add brown sugar. However, if you prefer, add one teaspoon of brown sugar to the spice mixture and season your chicken.

  • Replace chicken breast for chicken thighs if its what you have. I prefer to make this recipe with boneless skinless chicken breasts. However, you can make it with bone-in and skin on chicken thighs too.
  • If you want a more buttery sauce, add two extra tablespoons of butter.
  • If you like spices, add more paprika and Italian seasoning. You can use also cumin, coriander, garlic powder, chili powder, oregano and any other seasoning of your preference. Also, dont forget the salt and pepper. Add all the spices in a small bowl, mix well and then season your chicken breasts.
  • Make sure to not burn the garlic because it will change the taste of the entire dish.

But, be aware that the internal temperature will rise a little during the resting phase. So if it is at 160 degrees, Id suggest going ahead and taking it out of the oven.

    I wasnt going to post this recipe for a variety of reasons. The pictures are not beautiful. The recipe is silly, stupid simple. Its just chicken. I didnt want to insult you all by posting something like Oven Roasted Chicken Breast but the truth of the matter is..its the basis for many of my quick prep meals.
