Baked Chicken Thighs Recipe Ingredients
- Seasonings: This recipe uses a variation of my favorite Chicken Seasoning to season the chicken. For the seasoning rub youll need Italian seasoning, brown sugar, paprika, garlic powder, onion powder, salt and pepper. If you prefer to not add the brown sugar, the chicken will still be delicious. The sugar just helps the seasonings to caramelize on the chicken as it bakes.
- Bone-In Skin-On Chicken Thighs: To serve 6 people, buy 3 pounds of meat, or about 8 thighs.
- Olive Oil: Helps the seasonings to stick and the skin to get crispy.

Should You Leave The Skin On
The skin on chicken thighs helps to keep them moist and juicy while they bake. However, if you are watching your fat intake, you can remove the skin before cooking. Chicken thighs with the skin removed will still taste delicious, but they may be a little drier than thighs with the skin on.
If you do choose to leave the skin on, be sure to pat it dry before seasoning. This will help the seasonings stick to the chicken and also prevent the skin from becoming soggy. You can also apply a light coat of olive oil to the thighs to help the skin roast, creating a lovely, crisp, and flaky exterior.
Brine The Thighs Overnight
This is a great tip if you want your chicken thighs to be extra juicy. To brine chicken thighs, simply soak them in a mixture of water, salt, and sugar overnight. The brining process will help to break down some of the muscle fibers in the meat, allowing it to retain more moisture during cooking. It will also accentuate the meats natural flavors without the need for other seasonings.

Apply A Glaze Halfway Through The Baking Time
If you plan to add a barbeque sauce or other sweetened glaze, wait until the chicken thighs are about half-baked before adding it. This will prevent the glaze from burning or becoming too dark while also giving it enough time to cook and create a flavorful crust rather than a simple sauce.
To apply the glaze, simply brush it on with a pastry brush or spoon. Be sure to evenly coat the chicken thighs so that they all have a nice, even layer of glaze. Then, return the chicken thighs to the oven and let them finish baking.

Mustard Chicken Marinade Ingredients
- Thyme: I love the flavor of fresh thyme, but you can substitute with fresh rosemary, dried thyme or herbs de Provence.
- Salt and black pepper
The prep could not be easier: First, grab a medium-sized baking dish just large enough to snugly hold 6-8 chicken thighs. A 2-quart capacity dish or pan is ideal.
Your goal is for the chicken and shallots to roast in the oven while making a delicious pan sauce at the same time. If your pan is too large the juices will evaporate.
I use this all-purpose lightweight metal baking pan that goes from fridge to oven to table and it cleans up beautifully!
Put the chicken thighs in the pan, then mix up the marinade. Pour over the chicken and either bake immediately or cover and refrigerate up to 24 hours ahead.
How To Reduce Fat Content

Dark meat chicken gets a bad rap for fat content, but it can still be super healthy for you and part of a well-rounded diet. If you want to reduce the amount of fat with chicken thighs, first of all, you will want to use boneless, skinless chicken thighs. Use the instructions listed below.
However, you can go even further by using a wire rack so any extra fat from the chicken drains from the rack onto the baking sheet. You can employ this method with either boneless or bone-in chicken thighs.

When baking chicken thighs, the higher the temperature, the more golden brown the outer skin becomes. For chicken thighs, I like to bake them at 400 degrees Fahrenheit for 35 to 40 minutes at a time.

First, combine ingredients for marinade olive oil, Dijon Mustard, garlic, dried parsley, dried oregano, salt and pepper. We recommend marinating for at least one hour to let the flavors rest, but you can skip the time marinating and go directly to the next step.
