Though roasted pork tenderloin can lose some of its tenderness and flavor after being frozen, there are ways you can make this less of an issue. The flavor and texture will keep for 3-6 months in the freezer. If you can pull together some of the glaze and pour it on the meat before reheating, youll feel almost like youre eating this dish baked fresh all over again.
If you have multiple meals worth of pork left, try to freeze them separately. Dont cut each portion into slices just yet, though. Keeping as much of the meat whole as possible will stop it from drying out when you reheat it. Wrap each meal-sized portion in plastic wrap or foil before freezing it, and make sure to let it thaw for a few hours or overnight before cooking it again.
Should You Brine Pork Roast
I do not brine my pork loin, it is not a necessary step. The reason you would brine pork is to get a juicier pork roast in the oven, but in my opinion, if you cook the pork loin in the oven to the proper temperature it will be juicy.
If you decide to do it, it takes about 20 minutes to brine pork loin and you would combine:
Rinse the meat after brining to remove the excess salt before roasting the pork loin.
Brown The Pork In A Skillet
Before roasting, we always sear the pork on all sides first. After seasoning, throw it into a hot pan we love our cast iron skillet for this. Sear all sides until they are golden brown. Its okay if the pork is still raw in the middle.
When the pork is browned on all sides, its ready to slide into the oven. If youre using any herbs or seasonings, now is the time to add them .
You could have added herbs before searing the pork, but that risks buring them. By adding them after searing and before roasting, the herbs will add flavor, but wont turn brown and bitter.

Can I Cook Vegetables In The Same Pan
You can cook vegetables like potatoes, carrots, apples, and onions underneath the pork loin. But be aware that your dish may need to cook a little longer if you add veggies to the pan. Using the meat thermometer and measuring that the inside of the pork loin is 145 degrees is the best way to know if your pork loin is done.
You can also throw these crispy-skinned baked potatoes in the oven at the same time. While the pork loin cooks at a temperature that is 25 degrees less than I usually recommend for potatoes since you are likely already cooking the pork loin for over an hour the potatoes can cook a little longer at a slightly lower temperature too. Temperature And Time For Pork Loin
Some people like their pork really well cooked. This is because it used to be recommended that pork be cooked to 160°F. People got used to pork like that and continue to prefer it very white and drier, versus slightly pink and moist. If thats you and you need your pork well done, then go with the 160° temperature.
If you prefer it juicy and very slightly pink at the center, then go with 145°. For a 3-5 lb. roast, this will be 20-25 minutes per pound, whereas for an 8-10 pound roast it will be 8-11 minutes per pound. These are also the correct times and temperatures according to the the National Pork Board.
The reason why the number of minutes per pound decreases is because of the cylindrical shape of the roast. Bigger pork loin roasts are longer but not thicker. The heat doesnt take longer to reach the center of the roast from the outside in as the roast gets longer, and so the time per pound is reduced as the roast gets heavier.
Heat At 425 For 15 Minutes Then At 375
Preheat your oven to 425°. Once its ready, place the pork roast in oven on the middle rack and roast for 15 minutes. After the 15 minutes are up, drop the temperature of the oven to 375° and continuing roasting for 40-60 more minutes, depending on size of roast. We want the internal temperature of the roast to be 145° when checked in the center with an instant read thermometer. Checking with the thermometer is essential to getting a perfectly done dinner. Begin checking the temp after about 30 minutes. We dont want to overcook a boneless pork loin roast. Because its so lean, it can dry out quickly. In fact, I generally recommend removing the roast from the oven when the internal temp is about 140°-143°. It will continue cooking after we remove it from the oven and the carryover cooking will bring it to the ideal temperature.
