Why do I need to soak the potatoes before baking them?

Soaking the potatoes helps draw the starch out, stops them from sticking together, and all-in-all creates perfectly crisp fries.

Can I make them in the air fryer?

Yes, you can make these fries in the air fryer. Bake at 375F for 10-13 minutes. See our air fryer french fries post for more information.

    Should I peel the potatoes?

No, you do not have to peel the potatoes before slicing, however, you can peel them if that is how you prefer them.

Do I Need To Soak The Potatoes In Salt Water For French Fries

The salt water soak is essential to not overbrowning or even burning your fries while using the broil method. Soaking the potatoes in an ice bath helps remove moisture and starch from the potatoes resulting in a crispier and tastier fry. When I simply soaked the fries in normal cold water, they burned within minutes of cooking. The fries that had been soaked in salt water were much less likely to burn.

What Is The Best Oil For Baked French Fries

There are a variety of oil choices that can be used for baked french fries. You want to look for an oil with a neutral flavor and a high smoke point so that it doesnt burn in the oven. Some great options include vegetable oil, canola oil, peanut oil or safflower oil. I typically use either vegetable oil or peanut oil. Ive also used olive oil with good results, although it does impart a stronger flavor.

How Long Do I Soak My Fries For

Ultimate Baked French Fries (So Crispy!) â A Couple Cooks

I soaked my fries for 10 minutes and saw great results. Some people swear by soaking for more than 30 minutes and as long as overnight. When using the broil method , I didnt notice a difference in how long I soaked my fries. I tried a batch with a 10-minute soak and another batch with an overnight soak, and there was no difference in crispiness.

These fries are meant to be a quick snack with great flavor, and dont have the same crisp as the typical fry that you would eat at a restaurant.

    Use Yukon Gold Potatoes

    • I tested baked fries with both russet and Yukon gold potatoes, and while both do work, I preferred the final texture of the baked fries made with Yukon golds.
    • While both potato varieties crisped nicely on the outsides, I found the insides of the russets to be drier, while the oven fries made with the Yukon golds were more tender and creamy.
    • You may also see Yukon gold potatoes labeled simply gold or yellow potatoes at the grocery store.
    • A potato labeled Idaho typically refers to russet.

Trishs Tips For Fabulous Baked French Fries

This recipe is really very simple but here are my best tips for the best results:

Cut your fries as evenly as possible. If you happen to have a French fry cutter, use it! Some mandolines even have attachments that work too. This is the mandoline I have. Some variation is fine and is what, in my opinion, gives these oven baked fries some characters and shows theyre homemade.

Soak your fries in hot water. This the same thing I do when I make hashbrowns. It releases much of the starch and allows the oven fries to get extra crispy.

Get those fries really, really dry. Like dry to the touch. This is without a doubt the most important step. I use a salad spinner not just for salads but for drying rinsed herbs as well. And guess what? It also works great for french fries.

My favorite method is to drain the water from the fries, give them a quick rinse with fresh water and then stick them in the salad spinner basket to let them drain for a minute. Then I put my salad spinner to work followed by a thorough drying with some really absorbent kitchen towels. It takes a couple minutes but guys, its worth it. Trust me.

Dont skimp on the oil. I know it seems like a hefty amount of oil but its necessary. Its what makes these fries beautifully golden and crisp.

Dont forget to check the seasoning. When the fries come out of the oven, I like to hit them with a little more salt but only after a quick taste test. You dont want to over season but under seasoning can be even worse.

Extra Crispy Oven Baked French Fries

Crispy edges, soft centers extra-crispy French fries baked not fried so you can feel good about eating them!

When it comes to French fries, the single most important thing is the crispiness factor. We all know what typically makes the fries so crispy is the fact that they take a nice long, deep swim in a huge vat of oil. However, I am not a fan of that method. Why? Because.

    1. Our version, which uses the oven is super simple and these fries outshine all the others. They have the crispy outside and soft inside of their deep fried pals, without the oozing grease. And, since they arent deep fried, they dont start to get soft and soggy as they cool off. They stay nice and crunchy, even when they are totally cooled.

    2. Oven-baked fries are a bit healthier than deep-fried.

How to Make Extra-Crispy French Fries

The secrets to these incredible fries include a few of things, the main one being soaking the raw potatoes before you bake them to remove some of the excess starch. Less starch = more crispiness.

When it comes to slicing, I like to cut the fries to be a little thin but not shoestring-style and not too thick. About 1/4 inch wide. To slice the potatoes, I slice the whole potato lengthwise and then slice each piece of the potato again into fries.

After slicing, the potatoes get coated in olive oil, which helps the fries crisp up in the oven

The second most important thing is the seasoning. Whether it be plain sea salt or our spice blend, youve gotta have seasoning!
