So, I took on the daunting task of doing some research and learning a bit of science about the way chicken cooks. And I learned a lot from Serious Eats and Alton Brown, a ton. Like how you need to dry out the chicken wings ahead of time so they dont turn into a slippery, slimy mess.
And how baking powder is the magic ingredient needed to make all those little bubbles and pockets that hang onto the sauce once you toss them. I used baking soda on these Old Bay Grilled Chicken Wings and they turned out splendidly but the baking powder.that is the reason we now have the Very Best Crispy Baked Chicken Wings Recipe right here in front of us.

How Long To Bake Chicken Wings In The Oven
To bake crispy chicken wings in the oven, you would need to bake them for at least 30 minutes. Depending on the size, and type of oven used, here is a cooking time guide at possible temperatures to bake and timing:
How long to bake chicken wings at 400F is between 35- 40 minutes.
For how long to bake chicken wings at 350F is between 45-55 minutes. If you bake at this temperature and you would like the skin to be crispy, turn up the oven temperature to 200C/400F in the last 10-15 minutes for crispy wings.
How long to bake chicken wings at 370F is between 40-45 minutes.
Chicken wings are cooked when if probed by a meat thermometer at the thickest part, the internal temperature reaches at least 164F or 75C. It is not safe to eat chicken that is not cooked to this temperature.

How To Make Homemade Bbq Sauce:
1. Combine ingredients. Add all ingredients to a large saucepan and mix together until smooth.
2. Cook over medium heat, stirring frequently, until mixture comes to a boil, then reduce the heat and simmer for 20 minutes or up to one hour, stirring occasionally. Remove from heat and allow to cool. The sauce will thicken slightly as it cools.
3. Serve. Slather this stuff on just about anything or store in an air tight container or jar in the fridge for up to 3 weeks.
Double it? I love to make this sauce and keep it in the fridge for several weeks. Depending on your family size you could double the recipe to make a bigger batch. Its delicious for dipping/marinating grilled chicken, spooning on hamburgers or ribs, or dipping as a sauce. Its my go-to when I dont have a dinner plan.

I at first thought that they were using baking soda instead of baking powder. Doing so would definitely lead to a terrible taste. However, they claimed that they were really using baking powder for sure. I was stymied until another helpful commenter posted this link showing that some people are sensitive to a flavor that is found in some brands of baking powder.

The easy answer is until cooked through with an internal temp of 165 degrees, and a crispy skin. It can vary, based on the size of the wings, your oven, etc. But here is a good rule of thumb:
- Conventional Oven cook at 400 degrees F for 45-50 minutes, flipping them halfway through.
- Convection Oven cook at 400 degrees F, but reduce the cook time to 35-45 minutes flipping them halfway through.
The ideas is simple, start cooking them at a lower heat, and rendering the fat out, so when you turn the temperature up to 400, it should take only about 45-50 minutes to get a nice crispy skin!
- You can move the rack up so they are closer to the heating element too if you want to speed things up a little.
- You could bake them at 450 and it will cook faster, but after a lot of testing, I like the slightly longer cooking time at 400 degrees. They still come out juicy, and have optimal crispiness.
As you can see from this pre-sauce picture, the skin is crispy, and golden brown, and ready to be sauced or eaten as is.
I love that these wings are reduced fat because it melts away and you discard it. And that they can be paired with whatever sauce you want!
