    How Do You Make Crispy Chicken Thighs Without Frying

    This is the best recipe to make crispy chicken thighs in the oven. Instead of placing the chicken in a baking dish, you set it on a rack that sits over a baking sheet.

    The rack allows air to circulate under the chicken to get crispy on the bottom and the top. Make sure you keep them in a single layer and space them apart. If the chicken thighs are too crowded then they will just steam instead of roast.

    • Reheating in Oven: Set the temperature to 400F. Add chicken pieces to a baking dish with a bit of chicken broth in the bottom. Cover with foil. Cook until it reaches 165F in the thickest part . You can try broiling it for a few minutes at the end to crisp the skin up again. You can reheat the chicken thighs uncovered, but keep in mind that method is more likely to dry out the chicken.
    • Reheating in Microwave: If you can, put in on a plate and cover it with damp paper towel so it doesn’t dry out as much. Microwave in 1-2 minute increments until it’s warm.

    How To Season Chicken Thighs

    There are several different pre-packaged seasoning blend options out there, such as taco, barbecue, and Cajun seasoning. But you can make your own at home.

    One of my favorite homemade seasonings is this one: just mix together 4 teaspoon of paprika, 2 teaspoon of garlic powder, 1 teaspoon of brown sugar , 2 teaspoon of onion powder, 1 teaspoon of salt, ½ teaspoon of ground cumin, and 1 teaspoon of black pepper. If you want to add a kick, add ½ teaspoon chili powder or cayenne.

    Of course, you may also use any dry rub of your choice, about 3 tablespoon for 4 medium/large thighs.

    Whatever seasoning you choose, make sure to pat dry the thighs, brush with oil, and then season them well. Press the seasoning on with your hands to get it to stick on each side of the thighs.

    Variations For Our Baked Chicken Thighs Recipe

    • You can use boneless skinless chicken thighs if you prefer, just reduce the baking time by about 10 minutes.
    • Boneless, skinless chicken breast can also be used in this recipe, just reduce the baking time by 15-20 minutes.
    • We mentioned above that searing the thighs before baking them will help the skin stay crispy, but if that isnt important to you and you want to save a bit of time and effort you can definitely just bake the thighs in the sauce without searing them. You can also use a baking dish instead of a skillet if you take this route. You may need to add a few minutes to the overall baking time, but thats it!
    • Add some spices to the chicken thighs before searing them for even more added flavor like smoked paprika, Italian seasoning, cumin or garlic powder.

If you do use this recipe with a bone-in breast you will need to adjust the cooking time and make sure you have an internal temp of 165 before you take them out.

    One note, if you are not raising your own chicken you should consider getting pastured raised for the best quality and nutrition.

    If I have a choice I will always go for the dark meat as it is tastier and not dry at all. You may roast the chicken breast, but it can be tricky as it has a tendency to become very dry. For me, chicken legs, either whole, thighs or drumsticks, is the way to go. As a matter of fact, one of these always finds its way onto our dinner table at least once a week.

    When it comes to legs, should I use thighs, drumsticks or whole legs?

    I love thighs and drumsticks, but whole legs are delicious too. However, if you chose to roast whole chicken legs, youll need more time in the oven. For this baked chicken recipe I used both chicken thighs and chicken drumsticks just because that was all I had at home, but you could go either way.

I didnt like meat with bones growing up, so it took some time to come around. Lets just say Im glad I did, because this crispy baked chicken thighs recipe has become one of my favorite ways to make chicken!

    The good news is, baking chicken thighs is easier than you might think. This recipe is pretty much foolproof, so you can do it whether youve never oven baked chicken thighs or done it a hundred times.

    What Temperature To Bake Chicken Thighs


    I recommend baking chicken thighs at 450 degrees F, because the high temperature will make the skin super crispy and the inside juicy. You can also bake them at 400 or 425 degrees F, but it will take longer.

    I actually dont recommend oven baked chicken thighs at lower temperatures like 350, or even 375. Not only does it take longer, but in my testing the meat was less tender and the skin less crispy.
