Alright, so heres the secret! To make perfectly baked chicken bbrrreasts, you simply need to follow this 5-step acronym: B.B.R.R.R.
Brine : Im telling you this step is an absolute must for anytime you want to bake chicken breasts in the oven. Brining chicken is super-easy, it makes your chicken extra juicy, and best of all, it can be effectively done in just 15 minutes. Plus, if you brine chicken in lukewarm water, it also helps bring the chicken to room temperature, which makes for more even cooking. Win-win!
To brine chicken, simply fill a big bowl with lukewarm water. Stir in a handful of salt until it mostly dissolves. Then add your chicken breasts and let them sit in the saltwater to brine for at least 15 minutes. If you are doing this in advance, you can cover and refrigerate the bowl of chicken and saltwater for up to 6 hours. But you dont want to let the chicken brine for much longer than that.
When youre ready to go, remove the chicken from the brine. Give it a good rinse it with cold water to wash off the salt, and then pat it dry with some paper towels. And voila your chicken is officially brined.
Really, dont skip over this step! It makes a world of difference.
Note: That said, some store-bought chicken breasts are now sold pre-brined. So double-check your packaging beforehand. And if your chicken has already been pre-brined in a sodium solution, just move onto step two. 🙂

The answer to this question is going to depend heavily on how big your bird is. The important thing is that you want the chicken to reach an internal temperature of 165°F thats the temperature at which the salmonella bacteria is killed. For a chicken that weighs between 1kg and 1.5kg youll want to cook the chicken for about an hour at 375°F.
How do you know when youve achieved 165°F internally? You can use an instant-read or probe thermometer to tell you. If you use a thermometer youre going to want to poke the inner thigh of the chicken, making sure not to get too close to the bone. If you dont have a thermometer a good rule of thumb is to cook the chicken at 375°F for 45 minutes per kilogram plus an additional 15-20 minutes.

Roasted Chicken Round : Garlic Herb Butter Rub
This rub doesnt have an exact recipe. It was developed as a way to mimic the Knorr cubes, but without all the flavour enhancers and mystery yeast. Unsalted butter is used as a base and we added some pretty standard poultry seasonings and spices:
We didnt include measurements because we didnt use any we added everything and tasted the butter to see if we liked the flavour. This may sound disgusting, but its not that bad, and its the best way to tell if your spice blend is how you like it.
Fresh herbs vs dried herbs.
As a bonus we made two garlic butters one with fresh herbs and one with the dried herbs to see if it made a noticeable difference on the taste of chicken. We found that both the dried and non-dried herb butter made for a delicious chicken. The fresh herb butter chicken had a slightly more fresh taste to it , but if youre in a pinch, or dont have some of the fresh herbs on hand, the dried herb butter was completely acceptable, and miles ahead of the Knorr rub.

The first time I ever bought and cooked a whole chicken was to make Emerils Sunday roast chicken from my husbands cookbook. Its one of his favorites, and it is really delicious.
But its also a bit involved, both in terms of the prep and in the cooking process. Its also got a decidedly Cajun kinda flair.
So over the years I started playing around with a more traditional roasted chicken.
And today Im so excited to share my perfected whole roasted chicken recipe, plus ALL the tips and tricks Ive learned from making this SO many times.
This way, you can have total success from the get go. Especially if you are a first timer or feel at all intimidated by roasting a whole chicken. I know I did.

Broiler/Frying Chickens

How To Roast And Stuff A Whole Chicken
If youve never done it before, roasting a whole chicken can be intimidating. But stuffing a chicken is an easy way to add tremendous flavour to the whole bird. Roasting a stuffed whole chicken is also an economical way to make dinner for a crowd, plus you can use leftovers for a chicken broth.
Start by preheating the oven to 325°F , and make sure you have your stuffing prepared. Then, its really just as simple as preparing your favourite stuffing and placing it inside the chicken cavity, with enough room for steam to circulate . One of the best tricks of the trade when it comes to stuffing a chicken is to gently lift the skin away from the breast meat, creating an area where you can place herbed butter and bay leaves for delicious results.
Another tip when preparing a whole chicken is to bend the wings under the bird. This prevents them from burning. To keep everything in place while it cooks, wrap with chicken twine from top to tail, tying the legs neatly together.
Then, place the chicken in a large roasting pan surrounded with cubed vegetables , and some herbs such as rosemary and thyme. Cook it all together in the oven for 20-22 minutes per pound of chicken. Make sure to wash up well when handling raw chicken, including washing counters with warm soapy water and a cap of bleach.

Place the whole chicken in the middle of the 425F oven, rotating it halfway through if needed. A 4-pound chicken will take roughly 50-60 minutes.
If you are using a bigger chicken, then it will take longer. I usually plan on 15 mins per pound- ish . But dont rely on time, use a thermometer.
INTERNAL TEMPERATURE OF THIGHS AND BREASTS:
Use a kitchen thermometer, cook until chicken thighs reach 170-175 F and breasts reach 155-160 F. The nice thing about this is it will happen at roughly the same time. Meat should be opaque and juices should run clear, not pink.
Because there are veggies in the pan, its hard to see the juices, so I always just use a thermometer. OK?

Tips And Tricks For The Best Roasted Chicken
- To ensure the chicken cooks evenly, I like to take it out of the fridge around 10-15 minutes before I begin to prep it.
- For ultimate crispy skin, every time, be sure to thoroughly pat both the outside and inside of the chicken dry with a paper towel.
- Chicken needs salt to really be flavorful so dont skimp on it when youre roasting a chicken. Theres no need to be heavy handed but feel free to liberally season both the inside and the outside of the bird.
- Let chicken rest before carving! This step makes all the difference between perfectly juicy chicken and dry sad chicken. Letting the chicken rest before carving allows the juices to redistribute throughout the meat for the most tender and flavorful chicken every time.
Roast Chicken Dry Rubs
Many cooks use a dry rub a blend of dried and ground spices rubbing them under the chicken’s skin and inside the cavity. Since they’re under the skin, the flavorings won’t burn plus they’ll infuse the meat. This is a great way to add some spice if you’ll be discarding the skin.
- For a Southwestern flavor, try chile powder or pureed fresh chiles, cumin, and sage.
- For an Indian-inspired bird, mix together equal parts ground coriander and cumin, plus turmeric and a pinch or two of cardamom or garam masala.
- To give the chicken a Thai flair, try a paste of ginger, lemon grass, green chilies, cilantro, and lime juice.
