Why is steak sometimes tough and chewy? Steak is tough and chewy when the meat is poor quality and not fresh, the cut is not ideal for the cooking method, the steak is too lean, or the steak has been undercooked or overcooked. Steaks will also be tough if they are not rested after cooking and sliced against the grain.

How To Cook Your Steak To Desired Doneness

Keep in mind that your steak will continue to carry over cook once you remove it from the oven and let it rest, rising another 5 degrees. So, according to Chef Bryan Williams, remove steaks at these temperatures, which is a little lower temp than they were finish at, for the perfect doneness:

  • 115-125 degrees = Rare
  • 145-155 degrees = Medium Well
  • 155-165 degrees = Well Done

After removing your steak, transfer it to a plate or cutting board and cover with foil. Let it rest for 5-10 minutes.

Instructions For Cooking Steak In Oven

  • Let sit. Bring steaks to room temperature for about 15 to 30 minutes. Trim any excess fat.
  • Heat. Preheat the oven to 450°F and place large skillet in oven while its heating. Remove pan from oven and place over high heat on stove.
  • Season. Dry steaks with paper towel, then rub them with oil and season generously with S& P .
  • Sear. When pan is very hot, add in the steaks and sear on each side for 1 minute.
  • Bake. Then place pan in oven and bake for 4-6 minutes on one side. Flip and cook other side for 4-6 more minutes. Remove the meat 5° before it reaches the desired temperature.
  • Rest. Remove pan from oven and allow to rest for a few minutes. Top each steak with a slab of butter and fresh herbs if desired.

    What Do Steak Grades Mean

    USDA Prime this is the highest quality. Comes from young, well-fed cattle and has a lot of intramuscular marbling. It is not as widely available as choice quality so if you see it, I highly recommend you get it.

    USDA Choice high quality and much more widely available. These cut will have less fat content and less marbling than prime but still a good choice.

    USDA Select these are lower quality steaks and therefore much cheaper. There is less marbling so it is leaner, tougher, and less juicy.

    When choosing your steaks, try to get prime or choice grade and remember that you will get what you pay for.

    How Long To Cook Steaks In The Oven

    I get this question so often and it is actually my least favorite one. I can understand the ease of setting a timer and wanting the steak to take that exact time and voila, its perfect. Unfortunately, it doesnt work that way. You have to track the steaks temperature and not the time because each steak is different in amount of fat, in thickness, in muscle structure, and simply the way it will react to cooking.

    To get truly the steak you want at the level of doneness that you want, use a meat thermometer to check the temperature. The times that I will give you below is just the estimates and to be used as a guide and not exact measurement.

    What Is Sirloin Steak

    Sirloin steak is a popular cut of beef that comes from the sirloin of the animal, which is the rear back portion. Its leaner than a ribeye and more flavorful, but less lean, than a filet mignon. Top sirloin steak is preferred for simple steak recipes, such as this steak in the oven, whereas bottom sirloin is larger and less tender.

  • Bring your steak to room temperature.Cold meat will seize in a hot environment. Let it hang outside of the fridge for about 30 minutes while you preheat your oven.   • If you’re using a skillet, get it HOT. This rule mostly applies to thick cuts of meat and is key for a beautifully seared and caramelized crust. If you’re starting with a cold pan, the meat will turn an unappetizing shade of brownish-grey and will be totally one note in texture. You can either stick the skillet in the oven while it’s preheating, or simply heat it up on the stovetop over a flame.When you’re cooking something like a skirt steak under the broiler, the super hot and direct heat will be enough to achieve the same charred affect without the risk of overcooking the meat.
  • Sear it on one side! Again, only if you’re working with a big hunk of steak, sear one side in your skillet, just until it’s dark and the bottom starts to pull away, making it easy to flip. Once you turn it, it’s time for the oven.

    Materials Needed For Oven Baked Steak

    To cook a steak in the oven, there are a few tools and ingredients you should gather beforehand to make the process smooth sailing. First, look for a good cast iron skillet. We recommend that any baked steak gets a good sear in a hot skillet before or after cooking it in the oven, and your iron skillet will accomplish that.

    Youll also need a sheet pan or baking dish for oven cooking. If using a sheet pan, make sure it has a small lip to keep juices from running off into your oven. You can also use a grill pan placed on top of a sheet pan or baking dish to give your baked steak grill marks and a little added flavor.

    As for ingredients, gather steak seasoning and olive oil or if youre looking for an even healthier alternative try cultured oil. Youll use the olive oil for searing and can brush a little on the steaks before baking them to help them crisp around the edges.

The foil will lock in moisture to prevent it from escaping your steak to prevent it from drying out while it reaches your ideal doneness.
