With this cooking method, it’s a simple matter to heat your chicken breast to 165 F for as long as you want. The added advantage of sous vide is that no matter how long you leave it in the water bath, your chicken breast will never get any hotter than 165 F . This ensures juicy, tender breast meat with minimal effort.
How To Roast A Chicken

Once the chicken is dredged, youll want to either add a pat of butter on top of each piece or spray it with olive oil spray or cooking spray.

- Skinless, boneless thighs 170°F
- Bone-in chicken breasts 170°F
- Skinless, boneless chicken breasts 165°F
Use the 45-55-minute guideline for all your chicken pieces, but check the internal temp to stop baking before they get overcooked. How long you’ll bake a chicken breast at 375°F will vary depending on if it’s bone-in or boneless, so use the thermometer for the final say.

As you can see, the breast meat will become dry if taken too far above 150°F , while the leg meat needs to reach the temperature range of 160170°F in order for the connective tissue to dissolve into mouthwateringly rich gelatin. Knowing that salmonella has been scientifically proven to be safely eliminated at temperatures lower than 165°F , we followed Kenjis recipe for Simple Whole Roast Chicken to the finest detail, including the 145°F pull temperature.

Chicken drumsticks are baked within a temperature range of 350-380ºF.
How To Carve A Roasted Chicken:

- Once your chicken is cooked its time to carve it. You can either carve it at serving, or you can remove all the meat from the bones for later use.
- If you look at the breast there is a line running down the center. Place a sharp knife just to one side of that line and press down firmly. Youll hear ribs crack. Do the same on the other side as well and youll be able to remove the center bone.
- At this point youll be able to fold open the chicken and see exactly where your knife needs to go to remove the breast meat in one swoop. Cool, huh? Youll be able to remove all the chicken fairly quickly.
- Now dont throw away the bones quite yet. Either put them in the fridge or freezer and use them to make homemade chicken stock.
