How Can You Tell If A Chicken Is Done Without A Thermometer
There are a few ways to tell if a chicken is done without using a thermometer. First, you can check the color of the juices that come out of the chicken when you cut into it. If the juices are clear, then the chicken is most likely cooked through. Another way to tell if a chicken is done is to touch it and see how firm it feels.
Chicken that is cooked through will feel firm to the touch, while undercooked chicken will still be slightly soft in texture. Finally, you can use your best judgment when it comes to cooking chicken. If it looks and smells done, then its probably safe to eat.

How Long To Roast A Chicken
The amount of time it takes to fully roast your chicken will depend on the size and your oven! I typically roast a four pound bird and find that it takes me anywhere between an hour and fifteen minute to an hour and a half. For smaller birds it may take only an hour.
I like to start to check the doneness of my chicken at around 45 minutes. The most accurate way to check for doneness is to use a thermometer, inserted at the thickest part of the chicken but not hitting the bone. When the chicken is fully cooked, the temperature will read 165 degrees Fahrenheit and the juices will run clear and not pink.
Notes On Making A Whole Roasted Chicken:
- Chicken: The recipe calls for a 5 lb. whole chicken, but anywhere in the 4.5 to 6.5 lb. range is fine. Ive got notes on adjusting the cook time below.
- Chicken prep: Make sure to remove the giblets and any innards from the chicken and pat it dry really well. Starting with a dry bird will help it crisp and brown nicely in the oven.
- Herbs: Thyme is my go-to herb for stuffing into the cavity, but parsley would work well, too. You could also use a mix of herbs if you like.
- Butter/oil: Ive tested this recipe using both melted butter and extra-virgin olive oil for rubbing all over the outside of the chicken. Both work great, so use whichever you prefer.
- Basting: It helps to baste the chicken once or twice in the last half-hour of cooking. You dont need more than that and you dont want to open your oven repeatedly and have the temperature drop. You can even get away with only basting it when you pull it out of the oven, before it sits to rest, if you forget.
- Rest time: Make sure to let the chicken rest for at least 10-15 minutes before carving it. This is crucial to making sure it retains its juices and they dont run out.
As always, I use and recommend using a digital thermometer to ensure your chicken is properly cooked through. It should get to 160 before you remove it from the oven and then it will continue to cook as it rests.
Heres a few prep photos to show you what it looks like.
Oh, lets talk equipment, because you can probably use what you have on hand.

Is It Better To Bake Chicken At 350 Or 400
The answer to this question will depend on your personal preferences and the specific recipe youre using. Both 350 degrees Fahrenheit and 400 degrees Fahrenheit are common baking temperatures for chicken, but 350 degrees is more likely to result in a juicier, more tender chicken, while 400 degrees will give the chicken a crispier skin. Ultimately, its up to you to decide which temperature better suits your needs.
How To Make Whole Roasted Chicken In Dutch Oven
To make this recipe start with padding the chicken dry on the outside. Then rub the skin with lemon.
If you are using a whole fresh lemon cut it in half and put the two halves inside the chicken.
Drizzle oil on the skin and rub it in with your fingers or brush it on the skin before sprinkling the chicken with chicken seasoning.
Preheat the oven to 450 .
When the oven is hot put the Dutch Oven in the oven for 5 minutes to heat it before you add the chicken.
Take the pan out of the oven and add two tablespoons of oil to the pan. Swirl the pan and add the chicken to the pan.
Put the Dutch Oven in the oven and roast the chicken for 35 minutes with the lid on.
Take the pan out of the oven and turn the chicken. Add ¼ cup of chicken broth to the pan.
Return the chicken to the oven without the lid and cook for 30 minutes.
Turn the chicken one last time and add another ¼ cup of broth to the pan and cook for 20 more minutes
The chicken should be completely cooked through and the internal temperature should be 185 else leave it in the oven until it does.
Take the chicken out of the oven. Cover the Dutch Oven with the lid and let it rest for 10 minutes before serving.
Note: the whole chicken weighs approximately 2-3 pounds.

Dos And Donts For A Perfect Roasted Chicken:
Thaw the whole chicken ahead of time.
Make sure your chicken is completely thaw before you begin, so if you bought a frozen chicken, allow it to thaw in the fridge 1-2 days ahead of time.
Dont wash the chicken.
So maybe this may seem weird at first, but please avoid any inclination to wash your chicken in the sink, as it will contaminate your sink! Remove the chicken from its packaging and dry it off well with paper towels. Any bacteria on the chicken will be killed in the hot oven while it bakes.
Dont baste the chicken.
Basting is really unnecessary to produce a chicken with crispy skin. It also requires you to constantly open the oven, which causes the oven to loose heat and the chicken to take longer to cookwhich could lead to a dry chicken. By smearing an herb butter mixture over the outer and inner skin of the chicken you will ensure the skin will brown beautifully, and taste amazing.
Roast the chicken uncovered.
If you want to know how to get that beautiful crispy skin on your roast chicken, dont cover it during the first part of cooking! The butter mixture that we smear on the outside of the chicken will help the skin to get nice and crispy, and the butter that goes under the skin of the chicken breasts will help protect the meat from overcooking and drying out.
After the skin gets golden you can then add a piece of tinfoil to cover the top of the bird, if you want.

Do test the chicken with a thermometer.
