Do You Wash Chicken Before Cooking

Best Ever Oven Baked Chicken| How To Bake A Whole Chicken Easy

The answer is a clear NO! Do not wash it before you cook it it makes absolutely no sense whatsoever. Only cooking the bird until it reaches an internal temperature of at least 73 degrees Celsius/165 degrees Fahrenheit will guarantee that all the bacteria will be killed.

Washing it in your sink will only cause this bacteria to contaminate your sink and other surfaces.

There has been a long debate on this issue for many years now. Like Julia Child, many well-known chefs always talk about washing poultry in their recipes, and many people nowadays still cannot imagine not washing it. However, it is definitely not worth the risk of having those dangerous germs all over your kitchen afterward.

The USDA Food Safety and Inspection Service says: Washing raw poultry before cooking it is not recommended. Bacteria in raw meat and poultry juices can be spread to other food, utensils, and surfaces. This is called cross-contamination. Rinsing or soaking does not destroy bacteria. Only cooking will destroy any bacteria that might be present on fresh chicken.

NHS in the UK says that about 50% of the chicken sold in the UK carries the Campylobacter bacteria, which can cause belly pains, diarrhea, and vomiting. Washing raw chicken before cooking it can increase your risk of food poisoning from campylobacter bacteria. Splashing water from washing it under a tap can spread the bacteria onto hands, work surfaces, clothing, and cooking equipment.

  • Add fat and get under its skin. To get a crispy skin on your roast chicken thats juicy on the inside, slather the bird with a salted or unsalted butter or olive oil . Both work equally well and will turn your bird into a bronzed Brazilian bombshell from the beaches Rio de Janeiro with a crackin crispy crust. Gently work your fingers between the skin and the meat of the breasts and legs, separating the two from one another and work in another layer of flavor with additional butter or oil. Heres how to soften your butter when youre in a pinch. Also, try any of these blended butters for maximum flavor.
  • Add aromatics. Stuff your chicken with onion, lemon, garlic, and fresh rosemary to deliver a lovely flavor from within that permeates every juicy bite of the chicken meat. You can always play around with these. Some of my other favorite vegetables and herbs to use are: celery, carrots, turnips, and fresh thyme, oregano, sage, parsley and/or tarragon.
  • The best oven temperature to roast chicken. Were roasting our chicken, not baking it. Thats why a high temperature will ensure a crispy skin thats juicy on the inside. Roast your chicken at 425°F and baste occasionally while cooking.

How To Make The Best Roast Chicken

Follow these basic steps and youll be rewarded with a juicy chicken paired with perfectly crisp and flavorful skin.

  • PREP THE OVEN AND SPICES: Preheat the oven to 350°F. Mix all the spices, salt, and pepper in a small bowl.
  • PREP THE CHICKEN: Before seasoning the chicken, make sure you pat it dry using some paper towels. This ensures our spice rub will stick to the chicken. If you prefer, now is the time to cut the wing tips off the chicken. Use your hands to coat the chicken in the spice mixture. Make sure to get the seasoning inside the chicken as well! You can also rub a bit of olive oil over the chicken, once its been seasoned, it could help crisp up the skin. However, I find, that because we roast it at a high temperature for the last few minutes, the skin crisps up enough without the extra olive oil.
  • ROAST AND SERVE: If you want nows the time to add some potato wedges to the roasting pan to roast along with the chicken. You can also add other vegetables. Sometimes I add onion which I like to cut it up in quarters and some carrots as well. Bake in a roasting pan and on a roasting rack for 20 minutes per lb. Increase the heat to 450°F for the last 20 minutes to crisp the skin. Let it rest for 10-15 minutes, carve, and serve.
