How Long To Roast A Chicken Per Pound

The general rule of thumb is that it will take about 15 to 18 minutes of cooking time per pound of roast chicken plus an additional 15 minutes and then resting time. If you get a 6-pound chicken, you will be cooking it for a minimum of an hour and 20 minutes plus a 10-minute rest at the end once its out of the oven and under the foil. The best way to not overcook or under cook your chicken is to use a meat thermometer to check the cooked chicken temp. The FDA recommends the internal roast chicken temperature to reach 165°F.

How To Make Pan Dripping Gravy:

    Oven Roasted Whole Chicken

Just like with our Turkey Gravy, making a Chicken Gravy from pan drippings is so easy and will create the most flavorful gravy that is better than any powdered or pre-made gravy mix. We had just a little over 1 cup of pan drippings , but the amount can vary..

  • Strain pan drippings through a fine sieve, discarding solids.
  • Spoon off 4 Tbsp fat and add that to a small saucepan. Skim off and discard any remaining oil.
  • Make a Roux Place the saucepan over medium heat, add 2 Tbsp flour and whisk for 1 to 2 minutes until lightly golden.
  • Add drippings Add 1 cup of pan drippings and whisk until thickened and bubbling. Add about 1/2 cup water or milk, or to reach desired taste and consistency. Bring back to a simmer and remove from heat.

How Long Do You Cook A Whole Chicken

Roast a 4.5 to 5.5 lb. whole chicken at 425 degrees Fahrenheit for 1 hour, 15 minutes. A 6 to 6.5 lb. whole chicken will take 1 hour and 30 minutes at 425.

Your chicken should reach an internal temperature of 160 before you remove it from the oven.

A roasted chicken needs to rest for 10-15 minutes before cutting, so plan for that additional time as well.

Oh, and dont worry if you dont know how to truss a chicken. You honestly dont need any special tucking and tying techniques.

A simple truss for a baked whole chicken is to tuck the wings in and underneath the chicken so they are secured. And then tie the drumsticks together with a piece of kitchen string so they are held together.

Thats really all you need to do.

If you really want to go all in and do a fuller and more official truss, heres a step-by-step tutorial with photos that I found.

Also, to note: I always roast my chicken breasts side up. The breasts are our favorite part and what we want to be the most browned and crispy. It also helps to hold the shape of the chicken this way so it cooks evenly.

OK, now that youve prepped, cooked, basted and let your chicken rest, were ready to cut it up.

This for me was another area of concern, and a job I often turned over to my husband. I soon realized he didnt know what he was doing either.

Turns out though, its really not difficult.

And for those of us who regularly buy a rotisserie chicken at the grocery store and tear that up, its kinda the same process.

    Cooking Time For Roasted Chicken

In an interview with LIVESTRONG.com, Lisa Richards, CNC, nutritionist and creator of the Candida Diet, discusses how to use an electric roaster. She also answered some frequently asked questions.

When cooking in an electric roaster it’s important to know how long to fully cook an item to avoid the growth of pathogens, says Richards. “When preparing poultry, chicken specifically, you’ll want to cook the chicken long enough for all parts to reach at least 165 degrees Fahrenheit for 15 seconds.” Use a meat thermometer to check the internal temperature of the chicken.

This amount of cooking time varies with the weight of the chicken. “For example, a 3-pound chicken will need to be roasted at 375 degrees for approximately 75 minutes, while a 5-pound bird might need up to 2 hours,” she notes.

A chicken breast needs much less time to cook than a whole chicken, as it’s smaller and weighs less. “If cooking the chicken breast at 375 degrees, it should take approximately 25 minutes to cook it to the required temperature,” Richard states.

You may roast two chickens at the same time, so long as your roaster is large enough. “Cook both to an internal temperature of 165 degrees, which will generally take around 20-25 minutes for each pound of chicken,” she advises.

Do I Need To Truss The Chicken: Highly Optional

Trussing the chicken is something some cooks like to do, and others think is not necessary. Trussing the chicken means to tie up the legs with kitchen twine, close to the body of the bird, so that it keeps a neater, more compact shape.

Sometimes recipes will instruct you to fold the wings behind the chicken . The intention is that the light and dark meat will cook more evenly. I kind of think all of it is overrated, partly because its just one extra step. So usually, no trussing for me

Is It Better To Bake Chicken At 350 Or 400

For the best skin, heat the oven to 425°F.

I think most folks truly underestimate the importance of baking chicken in a hot oven. If the oven isnt hot enoughonly in the 350° to 400°F rangethe chicken will overcook before it can brown. At 425°F, the chicken is well browned yet still juicy after about an hour.

How To Cut Up A Whole Roasted Chicken:

    Oven
  • Place the chicken on a cutting board. Get a sharp carving knife or chefs knife and a fork.
  • Slice the skin of the chicken between the leg and the body.
  • Now you can see the leg joint. Cut to remove the drumstick and the chicken thigh together in one piece. Repeat on the other side.
  • To remove the chicken breasts, position your knife just above the wing on the side of the chicken. Cut horizontally in to where the breast used to meet the leg. Repeat on the other side. Next, cut along both sides of the breastbone of the chicken at the top. Cut straight down until youve cleared the breast bone then cut at an outward angle to meet your horizontal cut. This will pull the breasts away from the rib cage. Slice the chicken breasts in half or in thick slices, if desired.
  • Finally, remove the wings. Pull each wing out and away from the body then cut through the joint.
  • Ta da! And I promise, once you do it once or twice, youll get a better feel for it.

Heres a step-by-step tutorial of carving with photos if you need it.

Also, you can save the chicken carcass to make homemade stock. And any extra meat you can pick off the carcass can be used for chicken salad, soups, casseroles, quesadillas, etc.

How Long Does It Take To Roast Frozen Chicken Breast

When preparing chicken directly from the freezer, you should cook it for 50% longer than you would if you were making it from scratch. Cooking time for a typical unfrozen chicken breast weighing 5-7 ounces at 350°F is 20-30 minutes on average. So, depending on the size of the chicken breast, you may expect to cook a frozen chicken breast for 30-45 minutes.

Should You Roast A Chicken Covered Or Uncovered

For that golden brown crispy skin, youll need to roast your chicken uncovered instead of covered. If you roast a much larger chicken, that needs more oven time, you may find that the skin on the chicken starts to become too brown. If that happens, you can lightly tent a piece of foil overtop of the chicken to prevent it from burning.

    8. Put the roaster containing the chicken into the pre-heated oven. Roast the chicken uncovered.

    9. You want an internal temperature of 160°F. It will take between 25-30 minutes per pound to get there. Start checking the chickens temperature at 20 minutes per pound. So at 80 minutes for a 4 pound chicken use an instant read thermometer to test the temperature in both the middle of the breast and middle of the thigh, being careful not to touch the bone.

    10. At any point, if much of the stock has evaporated add more.

Tip: Add enough liquid so that it goes back up the sides of the pan. You do this to dissolve any brownings left on the side from the previous broth round. All of this brown flavor will be essential for your gravy.
