How To Carve A Roasted Chicken:

How To Cook A Whole Chicken In A Roaster Oven! Episode 111
  • Once your chicken is cooked its time to carve it. You can either carve it at serving, or you can remove all the meat from the bones for later use.
  • If you look at the breast there is a line running down the center. Place a sharp knife just to one side of that line and press down firmly. Youll hear ribs crack. Do the same on the other side as well and youll be able to remove the center bone.
  • At this point youll be able to fold open the chicken and see exactly where your knife needs to go to remove the breast meat in one swoop. Cool, huh? Youll be able to remove all the chicken fairly quickly.
  • Now dont throw away the bones quite yet. Either put them in the fridge or freezer and use them to make homemade chicken stock.

How To Carve A Roasted Chicken

  • Let the roast chicken rest for at least 15 minutes before carving. This allows the juices redistribute in the meat, meaning they wont go all over your cutting board when you carve into it.
  • Pull the legs slightly away from the rest of the bird and carefully slice through the leg meat and skin, removing the leg and thigh from the rest of the body.
  • Slice the breast meat from one side of the center breastbone at the front of the breast cavity. Move your knife from the front to the back of the chicken while simultaneously pulling the breast meat away from the bone. Repeat with the remaining breast.
  • Be sure to save the bones from your roasted chicken to make a simple, nutritious bone broth with the help of your slow cooker or instant pot!
  • What Makes Baked Chicken Tough

The answer may be in the ingredients used. Baked chicken is typically cooked in a baking dish with skin on. That allows the flesh of the bird to cook through and create a tenderness not found in many other types of poultry. Additionally, there are certain spices and flavors that can work together to make baked chicken tough.

    Cooking Time For Roasted Chicken

In an interview with LIVESTRONG.com, Lisa Richards, CNC, nutritionist and creator of the Candida Diet, discusses how to use an electric roaster. She also answered some frequently asked questions.

When cooking in an electric roaster it’s important to know how long to fully cook an item to avoid the growth of pathogens, says Richards. “When preparing poultry, chicken specifically, you’ll want to cook the chicken long enough for all parts to reach at least 165 degrees Fahrenheit for 15 seconds.” Use a meat thermometer to check the internal temperature of the chicken.

This amount of cooking time varies with the weight of the chicken. “For example, a 3-pound chicken will need to be roasted at 375 degrees for approximately 75 minutes, while a 5-pound bird might need up to 2 hours,” she notes.

A chicken breast needs much less time to cook than a whole chicken, as it’s smaller and weighs less. “If cooking the chicken breast at 375 degrees, it should take approximately 25 minutes to cook it to the required temperature,” Richard states.

You may roast two chickens at the same time, so long as your roaster is large enough. “Cook both to an internal temperature of 165 degrees, which will generally take around 20-25 minutes for each pound of chicken,” she advises.

How Long Do You Cook A Whole Chicken

Roast a 4.5 to 5.5 lb. whole chicken at 425 degrees Fahrenheit for 1 hour, 15 minutes. A 6 to 6.5 lb. whole chicken will take 1 hour and 30 minutes at 425.

Your chicken should reach an internal temperature of 160 before you remove it from the oven.

A roasted chicken needs to rest for 10-15 minutes before cutting, so plan for that additional time as well.

Oh, and dont worry if you dont know how to truss a chicken. You honestly dont need any special tucking and tying techniques.

A simple truss for a baked whole chicken is to tuck the wings in and underneath the chicken so they are secured. And then tie the drumsticks together with a piece of kitchen string so they are held together.

Thats really all you need to do.

If you really want to go all in and do a fuller and more official truss, heres a step-by-step tutorial with photos that I found.

Also, to note: I always roast my chicken breasts side up. The breasts are our favorite part and what we want to be the most browned and crispy. It also helps to hold the shape of the chicken this way so it cooks evenly.

OK, now that youve prepped, cooked, basted and let your chicken rest, were ready to cut it up.

This for me was another area of concern, and a job I often turned over to my husband. I soon realized he didnt know what he was doing either.

Turns out though, its really not difficult.

And for those of us who regularly buy a rotisserie chicken at the grocery store and tear that up, its kinda the same process.

How To Cut Up A Whole Roasted Chicken:

  • Place the chicken on a cutting board. Get a sharp carving knife or chefs knife and a fork.
  • Slice the skin of the chicken between the leg and the body.
  • Now you can see the leg joint. Cut to remove the drumstick and the chicken thigh together in one piece. Repeat on the other side.
  • To remove the chicken breasts, position your knife just above the wing on the side of the chicken. Cut horizontally in to where the breast used to meet the leg. Repeat on the other side. Next, cut along both sides of the breastbone of the chicken at the top. Cut straight down until youve cleared the breast bone then cut at an outward angle to meet your horizontal cut. This will pull the breasts away from the rib cage. Slice the chicken breasts in half or in thick slices, if desired.
  • Finally, remove the wings. Pull each wing out and away from the body then cut through the joint.
  • Ta da! And I promise, once you do it once or twice, youll get a better feel for it.

Heres a step-by-step tutorial of carving with photos if you need it.
